How to Make Ratatouille at Home

Ratatouille, a classic French Provençal dish, is a celebration of summer vegetables that bursts with flavor. It’s a perfect dish for those seeking a healthy and hearty meal. Here’s a simple step-by-step guide to making ratatouille at home.

Ingredients:

To make a traditional ratatouille, you’ll need:

  • 2 medium eggplants, diced into 1-inch cubes
  • 2 medium zucchinis, sliced into half-moons
  • 2 bell peppers (red or yellow), chopped into 1-inch pieces
  • 1 large onion, finely chopped
  • 4-5 medium tomatoes, peeled and chopped (or use 1 can of crushed tomatoes)
  • 3 cloves of garlic, minced
  • 1/4 cup of olive oil
  • 2 tsp of herbes de Provence (or a mix of thyme, rosemary, and oregano)
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Prepare the Vegetables: Start by prepping all the vegetables. Cut the eggplants, zucchinis, and bell peppers into even-sized pieces for consistent cooking. Chop the onions and mince the garlic.
  2. Sauté the Vegetables: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the eggplants and cook for 5-7 minutes until they start to brown and soften. Remove them from the skillet and set aside. Repeat this step for the zucchinis and bell peppers, adding more oil as needed, until each batch is slightly browned and tender. Set them aside as well.
  3. Cook the Base: In the same skillet, add a bit more olive oil and sauté the onions until translucent (about 4-5 minutes). Add the garlic and cook for another minute until fragrant. Pour in the chopped tomatoes and season with herbes de Provence, salt, and black pepper. Let this mixture simmer for 10 minutes to create a rich tomato base.
  4. Combine and Simmer: Add the pre-cooked eggplants, zucchinis, and bell peppers to the tomato base. Mix everything gently to ensure the vegetables are evenly coated with the tomato sauce. Cover and let the ratatouille simmer on low heat for 20-30 minutes, stirring occasionally. This allows the flavors to meld together beautifully.
  5. Check Seasoning and Serve: Taste the ratatouille and adjust the seasoning if necessary. Garnish with fresh basil leaves before serving.

  • Make it Ahead: Ratatouille tastes even better the next day as the flavors develop over time. Consider making it a day ahead for the best results.
  • Serve it Your Way: Serve ratatouille warm or at room temperature. It pairs wonderfully with crusty bread, rice, or even as a side to grilled meat or fish.
  • Add a Twist: For an elegant touch, arrange thinly sliced vegetables in a spiral pattern on top of the tomato base and bake for a more visually appealing presentation, similar to the dish seen in the movie Ratatouille.
