How to Make Spring Rolls at Home

Spring rolls are a popular appetizer and snack in many Asian cuisines, known for their crispy, golden exterior and fresh, flavorful filling. They can be made with a variety of ingredients, including vegetables, meat, and seafood. Making spring rolls at home is simpler than you might think, and with the right ingredients and technique, you can create delicious spring rolls that rival those from your favorite restaurant. Here’s a step-by-step guide on how to make spring rolls at home.

Ingredients

For the Filling:

  • 1 cup cooked shrimp or chicken (optional)
  • 1 cup shredded cabbage (green or napa)
  • 1 cup shredded carrots
  • 1/2 cup bean sprouts
  • 1/4 cup chopped fresh cilantro or mint
  • 1/4 cup thinly sliced cucumber
  • 1/4 cup rice vermicelli noodles (optional)
  • Salt and pepper to taste
  • 1-2 tablespoons soy sauce
  • 1-2 teaspoons sesame oil (optional)

For the Wrappers:

  • 12 spring roll rice wrappers (available at most Asian grocery stores)

For the Dipping Sauce:

  • 1/4 cup hoisin sauce
  • 1 tablespoon peanut butter (optional)
  • 1 tablespoon water (to thin the sauce)
  • 1 teaspoon rice vinegar or lime juice
  • 1 teaspoon soy sauce
  • Chili flakes or fresh chopped chili (optional for heat)

Instructions

1. Prepare the Filling

  • If using shrimp or chicken, cook and chop them into small pieces.
  • Cook the rice vermicelli noodles according to the package instructions, then drain and set aside.
  • In a large bowl, combine the shredded cabbage, carrots, bean sprouts, cucumber, and fresh herbs (cilantro or mint). Add the cooked shrimp or chicken, rice noodles (if using), and season with soy sauce, sesame oil, salt, and pepper to taste. Mix everything together and set aside.

2. Prepare the Rice Paper Wrappers

  • Fill a shallow dish or wide bowl with warm water. Dip one rice paper wrapper into the water for about 5 seconds or until it softens but is still slightly firm. Remove from the water and place it flat on a clean kitchen towel or cutting board.
  • Be careful not to leave the rice paper in the water for too long, as it can become too soft and difficult to handle.

3. Assemble the Spring Rolls

  • Place a small amount of filling (about 2-3 tablespoons) in the center of the rice paper wrapper, leaving about 1 inch of space on each side.
  • Fold the bottom edge of the rice paper over the filling, then fold in the sides and roll up tightly to enclose the filling. Be sure to roll them snugly but not too tightly, as the rice paper can tear if overstretched.

4. Prepare the Dipping Sauce

  • In a small bowl, combine hoisin sauce, peanut butter (if using), water, rice vinegar or lime juice, and soy sauce. Mix until smooth. Add chili flakes or fresh chopped chili for a spicy kick, if desired.

5. Serve

  • Arrange the spring rolls on a serving platter, and serve with the dipping sauce on the side.

  • Freshness is key: The ingredients for the filling should be fresh and crunchy for the best texture. Avoid overcooking the vegetables.
  • Keep the wrappers moist: Rice paper can dry out quickly, so always keep the unused wrappers covered with a damp towel to prevent them from becoming brittle.
