How to Make Sushi the South African Way

Sushi, a beloved Japanese delicacy, has taken the world by storm with its exquisite flavors and artful presentation. While traditionally associated with Japanese cuisine, sushi has undergone numerous adaptations and interpretations in culinary scenes around the globe. In South Africa, sushi has found its own unique twist, blending Japanese techniques with local ingredients and flavors to create a fusion experience like no other. Here’s how to make sushi the South African way:

Ingredients:

For the Sushi Rice:

  • 2 cups sushi rice
  • 2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt

For the Sushi Fillings (Customize to Your Preference):

  • Fresh fish (such as tuna, salmon, or yellowtail)
  • Avocado
  • Cucumber
  • Carrots
  • Cream cheese
  • Crab sticks
  • Pickled ginger
  • Wasabi
  • Soy sauce

For the South African Twist:

  • Avo (South African term for avocado)
  • Biltong (dried and cured meat)
  • Chakalaka (spicy vegetable relish)
  • Mrs. Ball’s Chutney (a popular South African condiment)

Instructions:

  1. Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is cooked and the water is absorbed. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Fold the vinegar mixture into the cooked rice and let it cool to room temperature.
  2. Prepare the Fillings: While the rice is cooking, prepare your desired sushi fillings. Slice the fresh fish into thin strips, dice the avocado, cucumber, and carrots into matchstick-sized pieces, and shred the crab sticks. You can also incorporate South African ingredients like biltong, avo, chakalaka, or Mrs. Ball’s Chutney for a unique twist.
  3. Assemble the Sushi Rolls: Lay a sheet of nori (seaweed) on a bamboo sushi mat. Moisten your hands with water to prevent the rice from sticking, then spread a thin layer of sushi rice evenly over the nori, leaving a small border along the edges. Arrange your desired fillings in a row along the bottom edge of the rice.
  4. Roll the Sushi: Using the bamboo mat as a guide, tightly roll the sushi away from you, pressing gently to seal the roll. Continue rolling until you reach the end, then seal the edge with a little water. Repeat the process with the remaining nori sheets and fillings.
  5. Slice and Serve: Using a sharp knife dipped in water, slice the sushi rolls into bite-sized pieces. Arrange them on a serving platter and serve with pickled ginger, wasabi, and soy sauce for dipping.
  6. Enjoy the Fusion Experience: Dive into the unique flavors and textures of South African-inspired sushi, combining the freshness of seafood with the boldness of local ingredients. Experiment with different combinations to find your perfect fusion creation.
