How to Make Tandoori Chicken at Home

Tandoori chicken is a classic Indian dish known for its smoky flavor, vibrant red color, and tender, juicy texture. Traditionally cooked in a tandoor (a clay oven), it can easily be recreated at home using an oven or stovetop grill. Follow this step-by-step guide to prepare restaurant-style tandoori chicken in your own kitchen.

Ingredients

For the Marinade:

  • 1 kg chicken (whole or drumsticks, with skin removed)
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons paprika
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon salt
  • Red food coloring (optional, for traditional color)

Instructions

1. Prepare the Chicken

  • Make deep cuts on the chicken pieces to allow the marinade to penetrate. Set aside.

2. Make the Marinade

  • In a large mixing bowl, combine yogurt, lemon juice, vegetable oil, ginger paste, garlic paste, and all the spices. Mix well to form a smooth marinade.
  • Add a few drops of red food coloring if desired to achieve the signature tandoori red hue.

3. Marinate the Chicken

  • Add the chicken to the marinade, ensuring every piece is well-coated.
  • Cover the bowl with cling film and refrigerate for at least 4 hours, or preferably overnight, for maximum flavor.

4. Cook the Chicken

Option 1: Using an Oven
  • Preheat the oven to 200°C (400°F).
  • Line a baking tray with aluminum foil and place a wire rack on top. Arrange the marinated chicken on the rack.
  • Bake for 20-25 minutes, then turn the pieces over and cook for another 15-20 minutes. For a charred finish, broil for 2-3 minutes on each side.
Option 2: Using a Stovetop Grill or Pan
  • Heat a grill pan over medium-high heat and brush with oil.
  • Cook the chicken pieces for 6-8 minutes on each side, ensuring they are fully cooked and slightly charred.

5. Serve

  • Garnish the tandoori chicken with fresh cilantro and lemon wedges. Serve hot with naan, basmati rice, or a side salad.

Tips for Perfect Tandoori Chicken

  • Use Bone-In Chicken: Bone-in chicken retains moisture better, resulting in a juicier texture.
  • Marinate Thoroughly: The longer the marination time, the more flavorful the chicken will be.
  • Adjust Spice Levels: Feel free to tweak the amount of cayenne pepper to suit your spice tolerance.
  • Smoky Flavor Hack: For a smoky flavor, place a piece of hot charcoal in a small bowl, set it in the middle of the marinated chicken, and drizzle a teaspoon of oil over it. Cover the bowl and let the chicken absorb the smoke for 5 minutes before cooking.

Making tandoori chicken at home is simpler than it seems and guarantees a flavorful dish that will impress your family and guests. With this recipe, you can enjoy a taste of Indian cuisine from the comfort of your kitchen!
