Ingredients:

  • 1 large tortilla wrap (whole wheat, spinach, or plain)
  • 2 large eggs
  • ½ avocado, sliced
  • ½ cup spinach or mixed greens
  • 1 small tomato, diced
  • ¼ cup shredded cheese (cheddar or your preferred type)
  • 1 tablespoon olive oil or butter (for cooking eggs)

Instructions:

  1. Prepare the Eggs: Heat a non-stick skillet over medium heat and add olive oil or butter. Crack the eggs into the pan, season with salt and pepper, and scramble them gently until they are cooked through but still soft. Set the eggs aside on a plate.
  2. Warm the Tortilla: In the same pan (or a separate one), lightly warm the tortilla wrap for about 30 seconds on each side. This will make it easier to fold and give it a slight crisp.
