Recipe Spotlight: Crumb It: Kelloggs Crispy Chicken Burger
Makes: 6 burgers
Ingredients:
For the patty:
– 4 large chicken breasts
– 1 egg
– 1 teaspoon oregano
– 1 teaspoon salt
– 1 teaspoon garlic powder
– 1/4 onion, chopped
– 1 teaspoon paprika
For the Seasoned flour & bran
– 1 cup flour
– 1 teaspoon salt,
– 1 teaspoon paprika
– 1 teaspoon pepper
– 1 teaspoon basil
– 1 teaspoon garlic powder
– 1 cup crushed Kelloggs All Bran Flakes
For the Egg mixture:
– 2 eggs
– 1/4 cups buttermilk
For Frying:
– 500ml sunflower or canola oil
For the coleslaw:
– 1 cup sliced red cabbage
– 1 cup sliced green cabbage
– 1/2 cup grated carrots
– 1/4 red onion, chopped
– 1 bunch fresh coriander, chopped,
– 3 pickles, chopped
– 2 tablespoon pickle juice
– 2 tablespoon mayonnaise
– 1 tablespoon tomato sauce
– 1 tablespoon mustard
For the burger:
– 1 pineapple, peeled and thinly sliced
– 6 slices cheddar cheese
– 6 burger buns, toasted
– 2 thinly sliced pickles
Method:
– In a food processor, add the chicken breasts, oregano, salt, garlic power, onion and paprika. Pulse until smooth and well combined.
– Roll into six balls and flatten using your hands to form a patty.
– Place the patties on a board or tray lined with baking paper and freeze for an hour.
– Prepare the seasoned flour by combining all the ingredients listed in bowl.
– In a separate bowl add the crushed Kelloggs All Bran Flakes
– In another bowl whisk the eggs and buttermilk together.
– In a large pan, add the oil and allow to heat up on medium high heat.
– Put the chicken patties into the seasoned flour and Kelloggs All Bran Flakes making sure to coat both sides.
– Dust off any access flour and dip into the egg mixture, coating both sides of the patty.
– Dip the patty back into the flour and bran and coat well on both sides.
– Repeat this with the remaining chicken patties and then fry on each side for 5-6 minutes while turning occasionally.
– Remove the patties from the hot pan and place onto an oven rack.
– In a large bowl combine all the ingredients for the coleslaw.
– Grill the pineapple slices in a clean pan till golden brown on each side.
– Assemble the burger starting with a toasted bottom bun, coleslaw, crispy chicken patty, cheese slice, sliced pickles, grilled pineapple slice, more coleslaw then close with the toasted top bun.
– Serve immediately while the patty is still warm..
