Ingredients:

For the Cake:

  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons dried culinary lavender buds
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk

For the Lavender Buttercream Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons dried culinary lavender buds (finely ground or use a mortar and pestle to crush them)
  • 2-3 tablespoons milk
  • Purple food coloring (optional, for a more vibrant color)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a small bowl, combine the flour, baking powder, and salt. Set aside.
  3. In a separate bowl, combine the dried lavender buds and granulated sugar. Use your fingers to rub the lavender into the sugar, releasing its aromatic oils.
  4. In a large mixing bowl, cream together the softened butter and lavender-infused sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the butter-sugar mixture, alternating with the milk. Begin and end with the flour mixture, mixing until just combined. Be careful not to overmix.
  6. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula to ensure even baking.
  7. Bake for approximately 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  8. While the cakes cool, prepare the lavender buttercream frosting. In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar and ground lavender buds, beating until well combined. Add the milk, one tablespoon at a time, until the frosting reaches a smooth and spreadable consistency. If desired, add a few drops of purple food coloring for a vibrant hue.
  9. Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a generous layer of lavender buttercream frosting on top. Carefully place the second cake layer on top and frost the entire cake, including the sides.
  10. For a finishing touch, you can garnish the cake with a sprinkle of dried lavender buds or decorate with fresh lavender flowers.
  11. Slice, serve, and let the delicate flavors of lavender dance on your palate. This lavender cake is a perfect treat for bridal showers, afternoon tea parties, or any occasion where you want to indulge in a bit of floral elegance.
