A lemon curd tart is the perfect combination of zesty, sweet, and buttery flavors. Its silky, tangy filling paired with a crisp pastry crust makes it an elegant dessert for any occasion. Whether you’re hosting a dinner party or craving a refreshing treat, this classic dessert is sure to impress. Here’s a step-by-step guide to making the perfect lemon curd tart.

Ingredients

For the Tart Crust:

  • 1 ¼ cups (160g) all-purpose flour
  • ½ cup (115g) unsalted butter, cold and cubed
  • ¼ cup (50g) granulated sugar
  • 1 large egg yolk
  • 2–3 tablespoons cold water

For the Lemon Curd Filling:

  • 4 large egg yolks
  • ¾ cup (150g) granulated sugar
  • ⅓ cup (80ml) freshly squeezed lemon juice (about 2–3 lemons)
  • 2 teaspoons lemon zest
  • ½ cup (115g) unsalted butter, cut into small pieces

Instructions

Step 1: Prepare the Tart Crust

  1. In a food processor or mixing bowl, combine the flour and sugar. Add the cold, cubed butter and pulse (or use your fingertips) until the mixture resembles coarse crumbs.
  2. Add the egg yolk and 2 tablespoons of cold water. Mix until the dough starts to come together. If it’s too dry, add another tablespoon of water.
  3. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. Preheat your oven to 375°F (190°C). Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim the edges.
  5. Prick the base with a fork and chill for 15 minutes. Line the crust with parchment paper and fill it with pie weights or dried beans.
  6. Bake for 15 minutes, then remove the weights and parchment. Bake for another 10 minutes or until the crust is golden brown. Let it cool completely.

Step 2: Make the Lemon Curd

  1. In a heatproof bowl, whisk together the egg yolks, sugar, lemon juice, and lemon zest.
  2. Place the bowl over a pot of simmering water (double boiler method). Stir constantly with a whisk or spatula until the mixture thickens and coats the back of a spoon, about 8–10 minutes.
  3. Remove the bowl from the heat and gradually stir in the butter pieces until fully incorporated and smooth.
  4. Strain the lemon curd through a fine-mesh sieve to remove any lumps or zest for a silky texture. Allow it to cool slightly.

Step 3: Assemble the Tart

  1. Pour the lemon curd into the cooled tart crust, spreading it evenly.
  2. Chill the tart in the refrigerator for at least 2 hours, or until the filling is firm and set.

Step 4: Serve and Enjoy

  1. Before serving, you can garnish the tart with powdered sugar, fresh berries, whipped cream, or a sprig of mint for a decorative touch.
  2. Slice and serve this delightful dessert chilled for the best flavor.
