  1. In a large pot, heat the olive oil over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
  3. Return the beef to the pot and add the carrots, potatoes, and tomatoes. Stir well to combine.
  4. Pour in the low-sodium beef broth and red wine (if using). The liquid should cover the ingredients. If needed, add more broth or water.
  5. Add the bay leaves, cumin, coriander, paprika, and turmeric. These spices will infuse the stew with aromatic flavors without relying on excessive salt.
  6. Season with salt substitute or low-sodium salt and freshly ground black pepper, according to your taste preferences. Remember, the low-sodium approach is about reducing salt, so use these alternatives sparingly.
