Originating in mid-19th century Russia, this dish has evolved over the years to become a staple in households around the world. Ingredients:

For the Beef:

  • 500g beef sirloin or tenderloin, thinly sliced
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter

For the Sauce:

  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 250g mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth

  1. Prepare the Beef: Season the thinly sliced beef with salt and black pepper according to your taste preferences. Heat olive oil and butter in a large skillet over medium-high heat. Once hot, add the seasoned beef slices and cook until browned on all sides, about 2-3 minutes per side. Remove the beef from the skillet and set aside.
  2. Saute the Aromatics: In the same skillet, add chopped onion and minced garlic. Cook until softened and fragrant, about 2-3 minutes. Add sliced mushrooms to the skillet and cook until they release their juices and become golden brown, about 5-7 minutes.
  3. Create the Sauce: Sprinkle all-purpose flour over the mushroom mixture and stir well to combine. Cook for 1-2 minutes to remove the raw flour taste. Gradually pour in beef broth, stirring constantly to prevent lumps from forming. Allow the mixture to simmer and thicken, about 3-5 minutes.
  4. Add the Creamy Elements: Reduce the heat to low and stir in sour cream, Dijon mustard, and Worcestershire sauce until fully incorporated. Season the sauce with salt and black pepper to taste.
  5. Combine Beef and Sauce: Return the cooked beef slices to the skillet, along with any accumulated juices. Stir well to coat the beef evenly with the creamy sauce. Simmer gently over low heat for an additional 5-7 minutes, allowing the flavors to meld together.
