Pho, a Vietnamese noodle soup, has captured the hearts and palates of food enthusiasts worldwide with its aromatic broth, tender rice noodles, and vibrant garnishes. Whether enjoyed as a comforting bowl on a chilly day or as a culinary adventure to tantalize the taste buds, pho offers a delightful experience for all. Let’s explore the art of crafting this beloved dish with an authentic Pho recipe.

Ingredients:

For the Broth:

  • 4 pounds beef bones (knuckle, marrow, or oxtail)
  • 1 large onion, halved and charred
  • 3-inch piece of ginger, halved and charred
  • 5 whole star anise
  • 6 whole cloves
  • 1 cinnamon stick
  • 1 tablespoon coriander seeds
  • 1 black cardamom pod
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 2 tablespoons fish sauce

For the Soup:

  • 1 pound rice noodles
  • 1 pound beef sirloin, thinly sliced
  • Garnishes: bean sprouts, Thai basil, cilantro, lime wedges, thinly sliced chili peppers, hoisin sauce, sriracha sauce

Instructions:

Prepare the Broth:

  • In a large pot, add the beef bones and cover with water. Bring to a boil and let simmer for 10 minutes. Discard the water and rinse the bones under cold water.
  • Place the bones back into the pot and add fresh water to cover. Add the charred onion and ginger, star anise, cloves, cinnamon stick, coriander seeds, and black cardamom pod.
  • Bring the pot to a gentle simmer. Skim off any foam that rises to the surface.
  • Simmer the broth uncovered for at least 6 hours, occasionally skimming the surface. Add more water if needed to maintain the level.
  • Once the broth has developed a rich flavor, strain it through a fine mesh sieve. Discard the solids.
  • Season the broth with salt, sugar, and fish sauce. Adjust the seasoning to taste.

Prepare the Soup:

  • Soak the rice noodles in hot water for about 20 minutes, or until softened. Drain and rinse under cold water.
  • Bring a pot of water to a boil and cook the rice noodles according to the package instructions. Drain and divide the noodles among serving bowls.
  • Arrange the thinly sliced beef on top of the noodles.

Assemble the Pho:

  • Ladle the hot broth over the beef and noodles, ensuring that the beef is submerged in the broth. The hot broth will cook the beef slices.
  • Serve the pho immediately with a plate of garnishes, allowing each diner to customize their bowl with bean sprouts, Thai basil, cilantro, lime wedges, sliced chili peppers, hoisin sauce, and sriracha sauce.
