Ingredients:

For the Poppy Seed Cake:

  • 2 large eggs

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • Lemon zest for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, poppy seeds, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredient mixture to the butter-sugar mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake for approximately 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  7. While the cake cools, prepare the lemon glaze. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  8. Once the cake has cooled, place it on a serving plate. Drizzle the lemon glaze over the top of the cake, allowing it to drip down the sides.
  9. If desired, garnish the cake with lemon zest for an extra burst of citrus flavor and visual appeal.
