Method

Preheat the oven to 200°C. Place the sweet potato cubes on a baking tray, drizzle with half the olive oil and season with smoked paprika, oregano, garlic powder, salt and pepper. Roast for approximately 25 minutes or until tender and lightly browned.

Meanwhile, heat the remaining olive oil in a large frying pan. Add the chicken and cook until browned and completely cooked through. Add the red pepper during the final few minutes of cooking.

Divide the spinach between four containers. Add the roasted sweet potato, chicken, red pepper and chickpeas. Top with feta and pumpkin seeds. Mix the yoghurt, lemon juice, honey, parsley, salt and pepper and spoon the dressing over the bowl before serving.
