Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder

  • 1/2 cup unsalted butter, melted
  • 2/3 cup milk (whole or almond milk for extra almond flavor)
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1/2 cup sliced almonds, for topping

Instructions:

  1. Preheat and Prepare:
    Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease the cups with cooking spray to prevent sticking.
  2. Mix the Dry Ingredients:
    In a large mixing bowl, whisk together the all-purpose flour, almond flour, granulated sugar, baking powder, and salt until well combined.
  3. Combine Wet Ingredients:
    In a separate bowl, whisk together the melted butter, milk, eggs, and almond extract until well blended.
  4. Incorporate the Wet and Dry Ingredients:
    Pour the wet ingredients into the bowl with the dry ingredients and gently fold them together using a spatula. Stir until just combined, being careful not to overmix.
  5. Fill the Muffin Cups:
    Using a spoon or an ice cream scoop, divide the batter equally among the prepared muffin cups, filling each about three-quarters full.
  6. Add Almond Topping:
    Sprinkle a generous amount of sliced almonds on top of each muffin, gently pressing them into the batter. The sliced almonds will add a delightful crunch and enhance the almond flavor.
  7. Bake to Perfection:
    Place the muffin tin in the preheated oven and bake for approximately 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. The muffins should be golden brown on top.
  8. Cool and Enjoy:
