Blueberry muffins are a beloved classic, and for good reason. The combination of tender, moist muffin batter and juicy bursts of sweet blueberries creates a delightful treat that is perfect for breakfast or as a snack any time of the day. In this article, we will share a tried-and-true recipe for homemade blueberry muffins that are easy to make and guaranteed to impress. Get ready to enjoy the aroma of freshly baked muffins and the delightful taste of plump blueberries in every bite.

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk (or substitute with 1 cup milk mixed with 1 tablespoon lemon juice)
  • 1 1/2 cups fresh or frozen blueberries
  • Optional: Additional sugar for sprinkling on top

Instructions:

  1. Preheat and Prepare:
    Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease the cups with cooking spray. This will prevent the muffins from sticking to the pan.
  2. Mix the Dry Ingredients:
    In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. This ensures that the dry ingredients are evenly distributed throughout the batter.
  3. Cream the Butter and Sugar:
    In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy. This can be done using a hand mixer or a stand mixer fitted with the paddle attachment.
  4. Add the Eggs and Vanilla:
    Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next one. Stir in the vanilla extract, combining it well with the butter and sugar mixture.
  5. Alternate Mixing Wet and Dry Ingredients:
    Add about one-third of the flour mixture to the butter and sugar mixture, followed by half of the buttermilk. Repeat this process, ending with the remaining one-third of the flour mixture. Mix until just combined, being careful not to overmix.
  6. Fold in the Blueberries:
    Gently fold in the fresh or frozen blueberries until evenly distributed throughout the batter. If using frozen blueberries, do not thaw them beforehand.
  7. Fill the Muffin Cups:
    Using a spoon or an ice cream scoop, divide the batter equally among the prepared muffin cups, filling each about three-quarters full. Sprinkle a little sugar on top of each muffin for a delightful crunch, if desired.
  8. Bake to Perfection:
    Place the muffin tin in the preheated oven and bake for approximately 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The muffins should be golden brown on top.
  9. Cool and Enjoy:
    Once baked, remove the muffin tin from the oven and let the muffins cool in the pan for 5 minutes. Transfer them to a wire rack to cool completely. Serve warm or at room temperature and enjoy the delectable taste of blueberry goodness.
