Ingredients:

  • 1 and 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 and 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted and cooled
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup chocolate chips (semisweet or dark chocolate)

Instructions:

  1. Preheat and Prepare:
    Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease the cups with cooking spray to prevent sticking.
  2. Mix the Dry Ingredients:
    In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt until well combined. Set aside.
  3. Cream the Butter and Sugars:
    In a separate bowl, cream together the melted butter, granulated sugar, and brown sugar until light and fluffy. You can use an electric mixer or mix by hand with a whisk.
  4. Add the Eggs and Vanilla:
    Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until combined.
  5. Alternate Adding the Dry Ingredients and Buttermilk:
    Gradually add the dry ingredients to the creamed mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined. Avoid overmixing, as it can result in dense muffins.
  6. Fold in the Chocolate Chips:
    Gently fold in the chocolate chips, ensuring they are evenly distributed throughout the batter. The melted chocolate chips will create pockets of gooey goodness in the muffins.
  7. Fill the Muffin Cups:
    Using a spoon or an ice cream scoop, divide the batter equally among the prepared muffin cups, filling each about three-quarters full.
  8. Bake to Perfection:
    Place the muffin tin in the preheated oven and bake for approximately 18-20 minutes or until a toothpick inserted into the center of a muffin comes out with a few moist crumbs. The muffins should have a soft and springy texture.
  9. Cool and Enjoy:
