For the doughnuts:

  • 2 and 3/4 cups all-purpose flour
  • 1/4 cup granulated sugar

  • 1/2 cup whole milk, warmed
  • 1/4 cup unsalted butter, melted
  • 2 large eggs

For the glaze:

  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Optional: Food coloring or flavored extracts for variations

Instructions:

  1. Prepare the Dough:
    In a large mixing bowl, whisk together the flour, sugar, instant yeast, and salt. Create a well in the center of the dry ingredients.
  2. Mix the Wet Ingredients:
    In a separate bowl, combine the warmed milk, melted butter, and eggs. Whisk them together until well blended.
  3. Combine the Dough:
    Pour the wet ingredients into the well in the dry ingredients. Stir with a wooden spoon or use a stand mixer with a dough hook attachment. Mix until a soft, slightly sticky dough forms.
  4. Knead the Dough:
    Transfer the dough to a lightly floured surface. Knead it gently for about 5 minutes, or until it becomes smooth and elastic.

  6. Shape the Doughnuts:
    Punch down the risen dough and turn it out onto a floured surface. Roll it out to a thickness of about 1/2 inch. Using a doughnut cutter or two round cookie cutters of different sizes, cut out doughnut shapes. Place the doughnuts on a baking sheet lined with parchment paper, leaving enough space between them for rising.
  7. Let the Doughnuts Rise:
    Cover the doughnuts with a clean kitchen towel and let them rise for another 30 to 45 minutes, or until they are puffy and have expanded in size.
  8. Fry the Doughnuts:
    Heat vegetable oil in a deep fryer or a heavy-bottomed pot to a temperature of around 350°F (175°C). Carefully add a few doughnuts at a time to the hot oil.   9. Make the Glaze:
    In a bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. If desired, add food coloring or flavored extracts for variations.
  10. Glaze the Doughnuts:
    Dip each cooled doughnut into the glaze, allowing any excess glaze to drip off. Place the glazed doughnuts on a wire rack to set for a few minutes.
