Pumpkin pie is a quintessential dessert that instantly evokes feelings of cozy autumn evenings and holiday gatherings. Ingredients:

For the Pie Crust:

  • 1 and 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cut into small cubes
  • 2-3 tablespoons ice water

For the Pumpkin Filling:

  • 1 and 1/2 cups canned pumpkin puree
  • 1 cup packed light brown sugar
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup evaporated milk
  • Whipped cream, for serving (optional)

Instructions:

  1. Prepare the Pie Crust:
    In a mixing bowl, combine the all-purpose flour and salt. Add the chilled butter cubes and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
  2. Preheat and Prepare:
    Preheat your oven to 425°F (220°C). On a lightly floured surface, roll out the chilled pie crust to fit a 9-inch pie dish. Carefully transfer the rolled-out dough to the pie dish and press it gently into the bottom and sides. Trim any excess dough hanging over the edges.
  3. Make the Pumpkin Filling:
    In a large mixing bowl, whisk together the pumpkin puree, light brown sugar, ground cinnamon, ground ginger, ground nutmeg, ground cloves, and salt until well combined. Add the eggs one at a time, whisking well after each addition. Gradually pour in the evaporated milk and continue whisking until the mixture is smooth and creamy.
  4. Fill and Bake:
    Pour the pumpkin filling into the prepared pie crust, smoothing it out with a spatula. Place the pie on a baking sheet to catch any spills. Bake in the preheated oven for 15 minutes. Then, reduce the oven temperature to 350°F (175°C) and continue baking for an additional 40-50 minutes, or until the center of the pie is set. To check doneness, insert a knife into the center of the pie – it should come out clean.
  5. Cool and Serve:
    Allow the pumpkin pie to cool completely on a wire rack. Once cooled, refrigerate for at least 2 hours to ensure the filling sets properly. Serve chilled or at room temperature, and if desired, top each slice with a dollop of whipped cream.
