Making them at home may seem intimidating, but with the right recipe and technique, you can create delicious soft pretzels that rival those from your favorite bakery. Ingredients:

For the dough:

  • 3 and 3/4 cups all-purpose flour
  • 1 and 1/2 teaspoons salt
  • 1 teaspoon sugar
  • 1 and 1/2 teaspoons instant yeast
  • 1 and 1/4 cups warm water

For boiling:

  • 10 cups water
  • 2/3 cup baking soda

For topping:

  • Coarse salt or pretzel salt
  • Melted butter (optional)

Instructions:

  1. Prepare the Dough:
    In a large mixing bowl, combine the all-purpose flour, salt, sugar, and instant yeast. Gradually add the warm water while stirring with a wooden spoon or using a stand mixer with a dough hook attachment. Mix until a soft and slightly sticky dough forms.
  2. Knead the Dough:
    Transfer the dough to a lightly floured surface and knead it for about 5 minutes until it becomes smooth and elastic. Alternatively, you can use a stand mixer with a dough hook attachment and knead the dough on low speed for the same duration.
  3. Let the Dough Rise:
    Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm, draft-free place for about 1 hour or until it doubles in size.
  4. Preheat the Oven and Prepare Boiling Water:
    Preheat your oven to 475°F (245°C). In a large pot, bring 10 cups of water to a rolling boil. Add the baking soda to the boiling water and stir until dissolved.
  5. Shape the Pretzels:
    Punch down the risen dough and transfer it to a lightly floured surface. Divide the dough into 8 equal pieces. Roll each piece into a long rope, about 20 inches in length. Take the ends of the rope and form a U-shape. Cross the ends over each other and press them onto the bottom of the U to form the pretzel shape. Repeat with the remaining dough.
  6. Boil the Pretzels:
    Carefully drop 2-3 pretzels into the boiling water, making sure they are fully submerged. Boil them for about 30 seconds, then use a slotted spoon or spatula to remove them from the water and place them on a baking sheet lined with parchment paper. Repeat with the remaining pretzels.
  7. Sprinkle and Bake:
    Sprinkle the pretzels with coarse salt or pretzel salt while they are still moist from the boiling water. Bake them in the preheated oven for about 12-15 minutes, or until they turn golden brown.
  8. Optional: Brush with Melted Butter:
    For an extra touch of flavor and shine, you can brush the baked pretzels with melted butter immediately after removing them from the oven.
  9. Serve and Enjoy:
    Allow the soft pretzels to cool for a few minutes before serving. They are best enjoyed fresh and warm. Serve them plain or with your favorite dipping sauces, such as mustard, cheese sauce, or sweet glazes.
