Begin by rinsing the lentils under cold water and removing any debris. In a large pot, heat the olive oil over medium heat and sauté the diced onion until it becomes translucent. Add the minced garlic and cook for an additional minute until fragrant.

Next, add the chopped carrots, potatoes, and red bell pepper to the pot. Stir the vegetables for a few minutes until they begin to soften. Now, it’s time to introduce the star ingredient – the lentils. Add the lentils, diced tomatoes, vegetable broth, ground cumin, ground coriander, and paprika to the pot. Stir everything together and bring the mixture to a boil.

Once the stew reaches a boil, reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes or until the lentils and vegetables are tender. Make sure to stir occasionally to prevent sticking.

As the stew simmers, the flavours meld together, creating a rich and comforting aroma that will make your mouth water. The lentils will absorb the savoury broth, resulting in a thick and hearty consistency that is characteristic of this South African dish.
