Kenyan Sukuma Wiki is a delicious and nutritious dish made from sautéed greens. It is a popular and widely enjoyed dish in Kenya, with “sukuma wiki” translating to “push the week” in Swahili, indicating its affordability and ability to stretch a meal throughout the week. Typically, collard greens or kale are used in this recipe, but you can also use other hearty leafy greens of your choice. Let’s explore the art of making Kenyan Sukuma Wiki.

Ingredients:

  • 1 bunch of collard greens or kale (about 500 grams), washed and chopped
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili flakes or fresh chili (optional, for heat)
  • Salt to taste
  • Juice of 1 lemon (optional, for tanginess)

Instructions:

  1. Heat the vegetable oil in a large pan or skillet over medium heat.
  2. Add the chopped onion to the pan and sauté until it becomes translucent.
  3. Stir in the minced garlic and grated ginger, and cook for an additional minute until fragrant.
  4. Add the diced tomatoes to the pan and cook until they soften and release their juices.
  5. Sprinkle the ground cumin, ground coriander, turmeric powder, and chili flakes (if using) over the tomato mixture. Stir well to combine the spices with the tomatoes.
  6. Add the chopped collard greens or kale to the pan, a handful at a time. Stir and coat the greens with the tomato mixture.
  7. Reduce the heat to low, cover the pan, and let the greens cook for about 15-20 minutes, or until they are tender. Stir occasionally to prevent sticking.
  8. Season the Sukuma Wiki with salt to taste, and squeeze the juice of one lemon over the greens for a tangy kick (optional).
  9. Cook for an additional 2-3 minutes to allow the flavors to meld together.
  10. Serve the Sukuma Wiki as a side dish or a main course. It pairs well with rice, chapati (Kenyan flatbread), or ugali (Kenyan cornmeal staple).
