North African Shakshuka is a bold and spicy dish that has gained popularity worldwide. Originating from countries like Tunisia and Morocco, Shakshuka is a flavorful combination of poached eggs in a rich tomato-based sauce, seasoned with aromatic spices and herbs. It is often served as a hearty breakfast or brunch option but can also be enjoyed as a satisfying dinner. Let’s explore the process of making North African Shakshuka.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 bell peppers, seeded and sliced
  • 3 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground cayenne pepper (adjust to your spice preference)
  • 1 teaspoon ground coriander
  • 1 can (400 grams) crushed tomatoes
  • Salt and pepper to taste
  • 4-6 large eggs
  • Fresh cilantro or parsley for garnish (optional)

Instructions:

  1. Heat the olive oil in a large skillet or frying pan over medium heat.
  2. Add the chopped onion and sliced bell peppers to the pan. Sauté them until they become softened and slightly caramelized.
  3. Add the minced garlic to the pan and cook for an additional minute until fragrant.
  4. Sprinkle the ground cumin, paprika, cayenne pepper, and ground coriander over the vegetables. Stir well to evenly coat the mixture with the spices.
  5. Pour the crushed tomatoes into the pan and season with salt and pepper to taste. Stir everything together, ensuring the vegetables are well incorporated with the sauce.
  6. Allow the sauce to simmer over medium-low heat for about 10-15 minutes, allowing the flavors to meld together and the sauce to thicken slightly.
  7. Using a spoon, create small wells or indentations in the sauce. Gently crack an egg into each well, taking care not to break the yolks.
  8. Cover the pan and let the eggs poach in the sauce for about 5-7 minutes, or until the egg whites are cooked, and the yolks are still slightly runny. Adjust the cooking time if you prefer your eggs more well-done.
  9. Once the eggs are cooked to your liking, remove the pan from heat. Garnish with fresh cilantro or parsley if desired.
  10. Serve the Shakshuka directly from the pan, alongside crusty bread, pita, or baguette for dipping and sopping up the flavorful sauce.

North African Shakshuka is known for its bold and spicy flavors. The combination of aromatic spices, tangy tomatoes, and perfectly poached eggs creates a delightful culinary experience. You can customize the dish by adding other ingredients such as crumbled feta cheese, olives, or chopped herbs like mint or basil for added freshness and complexity.

Whether enjoyed for breakfast, brunch, or any time of the day, North African Shakshuka is a delicious and satisfying dish that brings the vibrant flavors of the region to your table.
