Ghanaian Banku and Okra Soup is a comforting and flavorful combination that represents the rich culinary heritage of Ghana. Banku Ingredients:

  • 2 cups cornmeal
  • 1 cup cassava dough (optional, for added texture and flavor)
  • Water
  • Salt to taste

Okra Soup Ingredients:

  • 2 cups fresh okra, sliced
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 cups spinach or other leafy greens, chopped
  • 1 pound fish or meat (such as tilapia, mackerel, or beef), cut into bite-sized pieces
  • 1 tablespoon palm oil or vegetable oil
  • 2 cloves of garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground red pepper (optional, for heat)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Banku:
    • In a large pot, bring water to a boil.
    • In a separate bowl, mix the cornmeal, cassava dough (if using), and a little water to form a smooth paste.
    • Slowly pour the cornmeal mixture into the boiling water while stirring continuously to avoid lumps.
    • Reduce the heat to medium-low and continue stirring until the mixture thickens. Cook for about 15-20 minutes.
    • Add salt to taste and continue stirring until the Banku reaches a smooth, slightly elastic consistency.
    • Remove from heat and let it cool slightly.
  2. Prepare the Okra Soup:
    • Heat the palm oil or vegetable oil in a separate pot over medium heat.
    • Add the chopped onions and minced garlic. Sauté until the onions are translucent and fragrant.
    • Add the diced tomatoes and cook until they soften and release their juices.
    • Stir in the sliced okra and cook for a few minutes until slightly tender.
    • Add the fish or meat and cook until it is cooked through.
    • Season the mixture with ground ginger, ground red pepper (if using), salt, and pepper. Stir well to combine the flavors.
    • Add the chopped spinach or leafy greens and cook until wilted.
  3. Serve the Banku and Okra Soup:
    • Scoop a portion of Banku onto a plate or serving dish.
    • Ladle a generous amount of the Okra Soup over the Banku.
    • Garnish with additional chopped onions or fresh herbs if desired.
