The Coziest Way to Eat So Many Greens

Eating more greens doesn’t have to mean boring salads or plain steamed vegetables. The best way to enjoy a variety of leafy greens is in a warm, comforting dish that’s packed with flavor and nutrients. One of the coziest ways to incorporate multiple greens into your meal is by making a Creamy Green Power Soup—a rich, velvety blend of spinach, kale, chard, and fresh herbs, all brought together with a touch of cream and warming spices.

Creamy Green Power Soup Recipe

This hearty soup is packed with vitamins, fiber, and antioxidants from a mix of nutrient-dense greens. It’s perfect for chilly days when you want something nourishing and comforting.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 medium potato, diced (for creaminess)
  • 1 litre vegetable broth
  • 100 grams spinach
  • 100 grams kale, stems removed
  • 50 grams Swiss chard, chopped
  • 50 grams parsley, chopped
  • 30 grams coriander, chopped
  • ½ teaspoon dried thyme
  • ½ teaspoon cumin
  • ½ teaspoon black pepper
  • Salt to taste
  • 100 millilitres heavy cream (or coconut milk for a dairy-free option)
  • 1 tablespoon lemon juice

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until softened.
  2. Add the diced potato and vegetable broth. Bring to a boil, then reduce the heat and simmer for 10–15 minutes until the potato is tender.
  3. Add the spinach, kale, chard, parsley, coriander, thyme, cumin, salt, and pepper. Simmer for another 5 minutes until the greens are wilted.
  4. Use a blender or an immersion blender to puree the soup until smooth.
  5. Stir in the cream or coconut milk and lemon juice. Adjust seasoning as needed.
  6. Serve hot with a drizzle of olive oil and a sprinkle of extra herbs.
