Combining the bold and savory flavors of boerewors—a traditional South African sausage—with the natural sweetness of bell peppers, this dish is a delightful fusion of ingredients and a celebration of local flavors. In this article, we’ll explore the origins of boerewors-stuffed peppers and share a delicious recipe for you to try at home.

Boerewors, often referred to as the “farmers’ sausage,” holds a special place in South African cuisine. The word “boerewors” translates to “farmers’ sausage” in Afrikaans, the language spoken by many South Africans. It is a seasoned beef and pork sausage, typically made with a combination of spices like coriander, cloves, nutmeg, and pepper. Boerewors is deeply ingrained in South African culinary culture and is a popular choice for braais (barbecues) and social gatherings.

Boerewors-stuffed peppers take this beloved sausage to the next level by combining it with vibrant bell peppers. The dish not only showcases the flavor and texture of the boerewors but also highlights the natural sweetness and crispness of the peppers.

Here’s a simple recipe to create your own boerewors-stuffed peppers:

Ingredients:

  • 4 large bell peppers (any color of your preference)
  • 500g boerewors sausage
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Grated cheese (optional)
  • Fresh parsley or cilantro for garnish

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. Remove the boerewors casing and place the sausage meat in a bowl.
  4. In a pan over medium heat, sauté the chopped onion and minced garlic until they become translucent and fragrant.
  5. Add the boerewors meat to the pan and break it up with a wooden spoon. Cook until browned and cooked through.
  6. Sprinkle the paprika, ground cumin, salt, and pepper over the meat mixture. Stir well to incorporate the spices.
  7. Stuff the bell peppers with the boerewors mixture, ensuring they are filled to the top. You can press the filling down gently to fit more inside.
  8. Place the stuffed peppers in a baking dish and cover with foil.
  9. Bake in the preheated oven for approximately 25-30 minutes or until the peppers are tender and the filling is cooked through.
  10. If desired, remove the foil, sprinkle grated cheese on top of the stuffed peppers, and return them to the oven for a few minutes until the cheese melts and turns golden brown.
  11. Once cooked, remove from the oven and garnish with fresh parsley or cilantro.

Boerewors-stuffed peppers make for a hearty and flavorful main course or a standout addition to any South African-inspired meal. The combination of the robust spices in the boerewors sausage and the sweetness of the bell peppers creates a harmonious balance of flavors.
