The traditional South African dish, melktert ice cream, and a recipe

Melktert Ice Cream Recipe:

Ingredients:

  • 2 cups whole milk
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • 4 large egg yolks
  • 2 teaspoons vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup crushed shortbread cookies (optional, for added texture)

Instructions:

  1. In a saucepan, combine the whole milk and heavy cream. Heat the mixture over medium heat until it starts to steam, but avoid boiling it. Stir occasionally to prevent scorching.
  2. In a separate bowl, whisk together the granulated sugar, egg yolks, vanilla extract, ground cinnamon, and salt until well combined.
  3. Gradually pour a small amount of the warm milk mixture into the egg yolk mixture while whisking continuously. This helps temper the eggs and prevents them from curdling.
  4. Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over medium-low heat, stirring constantly with a wooden spoon or spatula, until the mixture thickens and coats the back of the spoon. This should take about 8-10 minutes.
  5. Remove the mixture from the heat and let it cool to room temperature. Once cooled, cover the mixture with plastic wrap, ensuring that it touches the surface of the custard to prevent a skin from forming. Refrigerate for at least 4 hours or overnight to chill thoroughly.
  6. Once the custard is chilled, transfer it to an ice cream maker and churn according to the manufacturer’s instructions. This usually takes about 20-25 minutes.
  7. If desired, add the crushed shortbread cookies during the last few minutes of churning to incorporate a delightful crunch.
  8. Transfer the churned ice cream into a lidded container and freeze for an additional 2-3 hours, or until firm.
  9. Serve the melktert ice cream in bowls or cones, and garnish with a sprinkle of ground cinnamon or crushed shortbread cookies, if desired.
