Umleqwa, a traditional dish from South Africa, celebrates the rich flavors of locally raised free-range chicken. This recipe not only highlights the deliciousness of the bird but also the cultural significance of community and shared meals. Here’s how to prepare Umleqwa in your kitchen:

Ingredients:

  • 1 whole free-range chicken (umleqwa), about 1.5 to 2 kg
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 carrots, sliced
  • 2 potatoes, peeled and cubed
  • 1 cup chicken broth
  • 2 tablespoons vegetable oil
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions:

  1. Prepare the Chicken: Clean the chicken thoroughly under cold running water. Pat it dry with paper towels. Cut into pieces suitable for serving.
  2. Sauté the Vegetables: Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onions and sauté until they become translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Add Spices and Tomatoes: Stir in the chopped tomatoes, green bell pepper, and red bell pepper. Cook for 5-6 minutes until the vegetables are softened. Add tomato paste, paprika, ground cumin, ground coriander, dried thyme, salt, and pepper. Mix well to combine.
  4. Cook the Chicken: Place the chicken pieces into the pot, turning them to coat with the vegetable mixture. Allow them to brown slightly on each side, about 5 minutes.
  5. Simmer with Broth: Pour in the chicken broth, ensuring it covers the chicken pieces. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer gently for about 45 minutes to 1 hour, or until the chicken is tender and cooked through.
  6. Add Vegetables: Add the sliced carrots and cubed potatoes to the pot. Simmer uncovered for an additional 15-20 minutes, or until the vegetables are tender and the sauce has thickened slightly.
  7. Serve: Remove the Umleqwa from heat. Adjust seasoning with salt and pepper if needed. Garnish with fresh cilantro or parsley. Serve hot with steamed rice, pap (maize meal porridge), or bread to soak up the flavorful sauce.
