1. Momofuku Soy Sauce Eggs

Ingredients:

  • 6 large eggs
  • 120 ml soy sauce
  • 120 ml mirin
  • 120 ml water
  • 1 tbsp sugar

Instructions:

  1. Bring a pot of water to a boil. Gently lower in the eggs and cook for 7 minutes.
  2. Transfer to an ice bath and peel once cooled.
  3. Mix soy sauce, mirin, water, and sugar in a bowl.
  4. Submerge the eggs and marinate in the fridge for at least 4 hours.

2. Slow-Baked Broccoli Frittata

This frittata is baked low and slow, resulting in a custardy and creamy texture with a lightly browned top.

Ingredients:

  • 6 large eggs
  • 150 ml whole milk
  • 100 g cheddar cheese, grated
  • 1 head broccoli, chopped

  • 200 g spaghetti

  • 50 g breadcrumbs
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. Cook spaghetti according to package instructions.
  2. Heat 1 tbsp olive oil and toast breadcrumbs with garlic.
  3. In another pan, fry eggs in remaining olive oil.

  • 2 tbsp fresh mint, chopped
  • 1 tbsp olive oil

Instructions:

  1. Heat oil in a pan, add jalapeño and cumin, and cook for 2 minutes.

  • 4 large eggs

  • 50 g Gruyère cheese, grated

  • 1 tbsp butter

  1. Preheat oven to 180°C.
