There are evenings when the last thing you want to do is spend an hour preparing dinner, washing dishes and cleaning the kitchen. On those nights, having a collection of easy meals that use simple ingredients can make the difference between eating a proper dinner and reaching for takeaway. Quick meals do not have to be boring because a few well-chosen ingredients can create food that is filling, flavourful and satisfying without much effort. The best low-effort dinners use shortcuts such as canned beans, frozen vegetables, cooked chicken, eggs, pasta and bread to reduce preparation time. Many of these meals can also be adjusted according to what you already have in the refrigerator or pantry. You can keep the recipes simple on busy nights while adding fresh herbs, cheese, sauces or spices when you have more energy. These 15 easy dinner recipes are designed to help you get a tasty meal on the table with minimal cooking and cleanup.

1. Creamy Garlic Pasta

Creamy garlic pasta is one of the easiest meals to make when you want something warm and comforting without spending much time in the kitchen. It uses basic pantry ingredients and can be ready in about 20 minutes.

Ingredients

Serves 2.

  • 200 g pasta
  • 15 ml olive oil
  • 20 g butter
  • 3 garlic cloves, finely chopped
  • 150 ml cooking cream
  • 50 g grated Parmesan
  • 30 to 60 ml pasta water
  • Salt and black pepper
  • 5 ml dried Italian herbs
  • Fresh parsley, optional

Method

Cook the pasta in salted boiling water according to the packet instructions. Reserve about 60 ml of the cooking water before draining. Heat the olive oil and butter in a large frying pan and cook the garlic for about 1 minute. Add the cream and herbs and simmer gently for 2 to 3 minutes. Stir in the Parmesan and enough pasta water to create a smooth sauce. Add the drained pasta and toss until coated. Season with salt and black pepper and finish with parsley if desired.

2. Loaded Scrambled Egg Toast

Eggs are an excellent option when you need dinner quickly because they cook in minutes and can be combined with almost anything. This recipe turns basic scrambled eggs into a filling meal with toast, cheese and vegetables.

Ingredients

Serves 2.

  • 4 large eggs
  • 30 ml milk
  • 10 g butter
  • 1 small tomato, diced
  • 30 g grated cheddar
  • 2 spring onions, sliced
  • 4 slices whole-wheat or white bread
  • Salt and black pepper
  • 1 avocado, sliced, optional

Method

Whisk the eggs with the milk, salt and black pepper. Melt the butter in a frying pan over medium-low heat. Add the tomato and spring onions and cook for 2 minutes. Pour in the eggs and stir gently until softly scrambled. Remove from the heat and stir through the cheddar. Toast the bread and top with the scrambled eggs. Add avocado if using.

3. Chicken and Avocado Wraps

Chicken wraps are particularly useful when you have leftover cooked chicken in the refrigerator. They require almost no cooking and can be assembled in minutes.

Ingredients

Serves 2.

  • 2 large flour tortillas
  • 250 g cooked chicken, shredded
  • 1 avocado, sliced
  • 1 tomato, diced
  • 50 g grated cheddar
  • 30 g mayonnaise
  • 15 ml lemon juice
  • 30 g lettuce, shredded
  • Salt and black pepper

Method

Combine the shredded chicken with the mayonnaise and lemon juice. Season with salt and pepper. Warm the tortillas briefly in a dry frying pan or microwave. Place lettuce, chicken, avocado, tomato and cheese down the centre of each tortilla. Fold in the sides and roll tightly. Cut in half and serve immediately.

4. One-Pan Sausage and Vegetables

A one-pan dinner is ideal when you want to reduce washing up. Sausages and vegetables can cook together while the oven does most of the work.

Ingredients

Serves 4.

  • 500 g pork, beef or chicken sausages
  • 500 g baby potatoes, halved
  • 2 bell peppers, sliced
  • 1 red onion, cut into wedges
  • 250 g broccoli florets
  • 30 ml olive oil
  • 5 ml smoked paprika
  • 5 ml dried mixed herbs
  • Salt and black pepper

Method

Preheat the oven to 200°C. Place the potatoes, peppers, onion and broccoli on a large baking tray. Add the olive oil, paprika, herbs, salt and pepper and toss well. Arrange the sausages among the vegetables. Roast for 30 to 40 minutes, turning the vegetables halfway through cooking, until the potatoes are tender and the sausages are cooked through. Serve directly from the tray.

5. Tuna Mayo Rice Bowls

A tuna rice bowl is a practical pantry meal that requires very little preparation, especially when using leftover or microwaveable rice. It can be served warm or cold depending on your preference.

Ingredients

Serves 2.

  • 300 g cooked rice
  • 1 x 170 g can tuna, drained
  • 45 ml mayonnaise
  • 10 ml lemon juice
  • 1 small cucumber, diced
  • 1 carrot, grated
  • 2 spring onions, sliced
  • 30 g sweetcorn
  • 15 ml soy sauce
  • Sesame seeds, optional

Method

Mix the tuna with the mayonnaise and lemon juice. Divide the cooked rice between two bowls. Add cucumber, carrot, sweetcorn and spring onions. Spoon the tuna mixture over the rice. Drizzle with soy sauce and finish with sesame seeds.

6. Cheese and Tomato Quesadillas

Quesadillas are one of the fastest ways to turn tortillas and cheese into dinner. You can make them more filling by adding beans, chicken, leftover vegetables or cooked mince.

Ingredients

Serves 2.

  • 4 flour tortillas
  • 150 g grated cheddar or mozzarella
  • 2 tomatoes, thinly sliced
  • 50 g sweetcorn
  • 30 g sliced spring onions
  • 2.5 ml smoked paprika
  • 10 ml olive oil

Method

Place two tortillas on a work surface. Divide the cheese, tomato, sweetcorn and spring onions between them. Sprinkle with smoked paprika and cover with the remaining tortillas. Heat the olive oil in a frying pan over medium heat. Cook each quesadilla for 2 to 3 minutes on each side until golden and the cheese has melted. Cut into wedges and serve with salsa or plain yoghurt.

Add the chickpeas and frozen vegetables. Simmer for 15 to 20 minutes until the vegetables are tender. Season to taste and serve with cooked rice.

13. Loaded Baked Potatoes

Baked potatoes are an easy dinner when you want something filling but do not want to prepare several different dishes. The microwave can speed up the cooking process before you finish the potatoes in the oven.

Ingredients

Serves 2.

  • 1 x 410 g can baked beans
  • 60 g plain yoghurt or sour cream

Add beans, cheese, yoghurt and spring onions. Season with salt and pepper.

Season with salt and pepper and finish with parsley.

How to Make Low-Effort Dinners Even Easier

Keeping a few versatile ingredients available can make quick dinners much easier. Eggs, pasta, rice, canned beans, canned tuna, tortillas, frozen vegetables, cheese and bread can form the basis of numerous meals.

Cooked chicken is another useful ingredient to keep available. You can use leftovers in wraps, pasta, fried rice, quesadillas and salads without cooking another protein from scratch.

Frozen vegetables can also save considerable preparation time. They are already washed and cut, so they can go directly into soups, curries, stir-fries and rice dishes.

Sauces and condiments are useful for adding flavour quickly. Pesto, mayonnaise, soy sauce, curry powder, mustard, tomato sauce and chilli sauce can change the character of a simple meal without requiring a long ingredient list.

How to Reduce Washing Up

One-pan meals are the obvious choice when you want fewer dishes. Sausage and vegetables, fried rice, pasta dishes and curries can often be prepared in one large pan or pot.

You can also line baking trays with baking paper or foil when appropriate. This reduces the amount of scrubbing required after roasting.

Another useful habit is to prepare ingredients directly in the cooking vessel whenever possible. For example, mix a sauce in the same bowl you plan to use for the finished dish rather than creating unnecessary dishes.

Clean as you go only when it is practical. On nights when you are exhausted, getting dinner ready matters more than maintaining a perfectly clean kitchen throughout the cooking process.

How to Make These Meals More Nutritious

Easy meals can still contain a useful balance of protein, carbohydrates, vegetables and healthy fats. Add vegetables to pasta, wraps, rice dishes and quesadillas whenever possible.

Protein can come from eggs, beans, chicken, tuna, yoghurt, cheese or chickpeas. Choosing whole-wheat pasta, brown rice or whole-grain bread can also increase the fibre content of your meal.

Portion size matters as well. If a meal is particularly rich, serve it with a simple salad or steamed vegetables rather than adding another heavy side dish.

The goal is not to make every quick dinner perfect. Having practical meals that you will actually prepare is often more useful than relying on complicated recipes that leave you too tired to cook.

Easy Ways to Change the Recipes

Most of these meals can be adapted according to what you have available. Replace chicken with tuna, beans or eggs, depending on the recipe.

Swap vegetables freely. Spinach, broccoli, peppers, carrots, peas, sweetcorn, mushrooms and courgettes can work in many quick meals.

Cheese can also be changed according to what is in the refrigerator. Cheddar, mozzarella, feta, Parmesan and cream cheese each bring a different flavour and texture.

Use herbs and spices to keep familiar meals interesting. Garlic, paprika, curry powder, oregano, chilli flakes, cumin and mixed herbs can transform the same basic ingredients into completely different dinners.

Final Thoughts

Nights when you do not feel like cooking do not have to end with expensive takeaway or an unsatisfying snack. These 15 easy meals show that you can prepare a proper dinner using simple ingredients, minimal equipment and practical shortcuts. Pasta, eggs, chicken, beans, tuna, rice, potatoes and vegetables can be combined in countless ways to create meals that are quick but still satisfying. Keeping a few reliable pantry and freezer staples available means you can make dinner even when your energy and motivation are low. One-pan recipes, wraps, quesadillas, bowls and simple pasta dishes also make it easier to keep washing up under control. You can adapt almost every recipe by swapping proteins, vegetables, sauces and seasonings according to what you already have at home. The most useful easy dinner is not necessarily the fastest recipe but the one that is simple enough for you to make when you are tired, hungry and ready to call it a night.
