Tofu is one of the most underrated ingredients when it comes to creating hearty and comforting meals. It’s packed with plant-based protein, has a satisfying texture, and absorbs flavours beautifully. Whether you’re cutting back on meat or just want something warm and filling, tofu can be your weeknight hero.

Here are two easy and delicious tofu dinner ideas that are perfect for cozy nights in.

Creamy Coconut Tofu Curry

When you’re in the mood for something rich and soothing, this creamy coconut tofu curry hits the spot. It’s aromatic, full of flavour, and incredibly simple to make.

Start by pressing a block of firm tofu to remove excess water, then cut it into bite-sized cubes. Lightly pan-fry the tofu in a little oil until golden and crisp, then set it aside.

In the same pan, sauté chopped onions, garlic, and fresh ginger until fragrant. Add a blend of curry powder, turmeric, and a pinch of chilli flakes. Pour in a can of coconut milk and a splash of vegetable broth, then bring to a gentle simmer.

Toss in the tofu along with vegetables like spinach, peas, or chopped bell peppers. Let everything simmer together for 10 to 15 minutes so the flavours can develop. Finish with a squeeze of lime juice and fresh coriander. Serve over fluffy rice or with warm naan for a comforting dinner that’s both nourishing and satisfying.

Garlic Tofu Stir-Fry

For nights when you want something fast, flavourful, and still comforting, a good tofu stir-fry is always a winner. It’s a great way to use up whatever vegetables you have on hand and packs a punch with its savoury garlic sauce.

Start by cutting firm tofu into cubes and pan-frying until golden on all sides. Set aside while you prepare your vegetables. Sliced carrots, bell peppers, broccoli, snap peas, and baby corn all work well in stir-fry.

In a hot wok or large pan, cook your veggies in a little oil until just tender but still crisp. Add minced garlic and a touch of grated ginger, cooking for another minute. Stir in a sauce made from soy sauce, a splash of sesame oil, rice vinegar, and a bit of maple syrup or brown sugar for balance.

Add the tofu back in and toss everything together until coated and heated through. Serve with rice or noodles, and sprinkle with sesame seeds or chopped spring onions for extra flavour and texture.

Both of these tofu dinners are comforting, nourishing, and easy to prepare. Whether you’re winding down after a busy day or just want something wholesome and delicious, tofu has a way of turning simple ingredients into something truly satisfying.
