1. Creamy Mushroom and Spinach Skillet Gnocchi
Sautéed mushrooms and wilted spinach transform store‑bought gnocchi into a luscious, restaurant‑style skillet dinner. Start by cooking gnocchi in boiling water until they float, then drain and set aside. In the same pan, melt butter or heat olive oil, add sliced cremini or button mushrooms, and cook until golden. Stir in minced garlic and a pinch of red pepper flakes, then add fresh spinach until just wilted. Return gnocchi to the pan, pour in a splash of cream (or half‑and‑half), and stir until the sauce thickens slightly. Using a single sheet pan, this meal combines savory sausage, tender gnocchi, and sweet bell peppers for an easy, cleanup‑friendly dinner. Preheat the oven to 220 °C. Toss sliced smoked or Italian sausage, bite‑sized gnocchi, sliced red and yellow peppers, and onion wedges with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread everything in a single layer and roast for 20–25 minutes, stirring once, until the gnocchi is crisped on the edges and the sausage is browned. A sprinkle of fresh basil or a drizzle of balsamic glaze adds a finishing touch.

3. Baked Gnocchi Casserole with Tomato, Mozzarella & Basil
This cozy casserole puts a twist on classic pasta bake. In a mixing bowl, combine boiled gnocchi, canned crushed tomatoes (or marinara), minced garlic, dried oregano, salt, and pepper. Transfer to a baking dish, top with torn fresh mozzarella or shredded mozzarella blend, and bake at 200 °C for 15–18 minutes until the cheese is melted and bubbly. Let it rest for a few minutes, then scatter fresh basil leaves on top. Serve with garlic bread or a green salad for a comforting meal that feels homemade.
