  • 40 g finely grated Parmesan

Method

Bring a large saucepan of salted water to the boil.

Cook the pasta according to the packet instructions until al dente. Reserve 150 ml of the pasta cooking water before draining.

Heat the olive oil in a large frying pan over medium heat.

Add the onion and cook for approximately 3 to 4 minutes until softened.

Add the garlic and cook for another 30 seconds.

Pour in the cream and chicken stock.

Add the mixed herbs, paprika and a little black pepper.

Simmer gently for 3 to 4 minutes.

Stir in the Parmesan until melted.

Add the spinach and cook until wilted.

Add the shredded rotisserie chicken and warm for approximately 2 to 3 minutes.

Add the cooked pasta and toss everything together.

If the sauce is too thick, gradually add some of the reserved pasta water until you reach your preferred consistency.

Ingredients

  • 300 g cooked rotisserie chicken, shredded
  • 250 g long-grain rice
  • 15 ml olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 red pepper, diced
  • 1 carrot, diced
  • 150 g frozen peas
  • 500 ml chicken stock
  • 5 ml smoked paprika
  • 2.5 ml ground cumin
  • 2.5 ml dried thyme
  • 1 bay leaf
  • Salt and freshly ground black pepper
  • 15 ml fresh lemon juice
  • 15 g fresh coriander or parsley, chopped

Method

Heat the olive oil in a large deep frying pan over medium heat.

Add the onion and cook for 3 minutes.

Add the garlic, red pepper and carrot.

Cook for approximately 4 minutes until the vegetables begin to soften.

Stir in the rice, smoked paprika, cumin and thyme.

Cook for 1 minute while stirring to lightly toast the rice.

Pour in the chicken stock.

Add the bay leaf and season with salt and black pepper.

Bring the mixture to a gentle simmer.

Cover the pan and reduce the heat to low.

Cook for approximately 15 to 18 minutes, or until the rice has absorbed most of the liquid and is tender.

Add the frozen peas and shredded chicken.

Cover again and cook for another 4 to 5 minutes until the peas are heated through and the chicken is hot.

Remove the bay leaf.

  • 120 g plain Greek yoghurt
  • 15 ml fresh lime or lemon juice
  • 10 ml hot sauce
  • 2.5 ml smoked paprika
  • 1 small garlic clove, finely grated
  • Salt and black pepper

Method

Combine the yoghurt, lime or lemon juice, hot sauce, smoked paprika and garlic in a small bowl.

Season with salt and black pepper.

Warm the shredded chicken in a frying pan over medium heat for 3 to 4 minutes. Add a splash of water or chicken stock if the chicken seems dry.

Warm the tortillas briefly in a dry frying pan or microwave until flexible.

Place the lettuce in the centre of each tortilla.

Add the warm chicken, avocado, tomatoes, red onion and grated Cheddar.

Drizzle with the spicy yoghurt sauce.

Scatter over the fresh coriander.

Fold the sides of the tortilla inward and roll tightly from the bottom.

Serve immediately.

How to Make the Wraps More Filling

Add cooked beans, roasted sweet potato or leftover rice to the filling. These ingredients make the wraps more substantial while helping you use up leftovers.

For a crispier finish, place the filled wraps seam-side down in a dry frying pan and cook for 2 to 3 minutes per side until lightly golden.
