  • 1.5 kg beef rib roast

  • 1 tbsp fresh thyme, chopped
  • Salt and black pepper
  • 500 g carrots, cut into chunks
  • 500 g potatoes, quartered
  • 1 cup beef stock

Method:

  1. Preheat oven to 180°C.
  2. Rub beef with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Arrange carrots and potatoes around the beef in a roasting tray.
  4. Pour beef stock into the tray.
  5. Roast for 1 hour 30 minutes, basting halfway through.
  6. Rest for 15 minutes before carving.

Ingredients:

  • 1 whole chicken (about 1.8 kg)
  • 2 tbsp olive oil
  • 1 lemon, halved
  • 4 garlic cloves
  • 2 tsp paprika
  • 2 tbsp fresh thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 500 g baby potatoes
  • 300 g parsnips, cut into sticks

Method:

  1. Preheat oven to 190°C.
  2. Rub chicken with olive oil, paprika, thyme, salt, and pepper.
  3. Stuff chicken cavity with lemon halves and garlic cloves.
  4. Place potatoes and parsnips around chicken in a roasting pan.

  • 1.5 kg lamb shoulder

Ingredients:

  • 1 large butternut squash, halved and seeded
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp thyme
  • Salt and black pepper
  • 200 g Brussels sprouts, halved
  • 200 g carrots, cut into chunks

Method:

  1. Preheat oven to 200°C.
  2. Brush squash with olive oil, paprika, garlic powder, thyme, salt, and pepper.
  3. Arrange squash cut side down on a roasting tray.
  4. Toss Brussels sprouts and carrots with olive oil, salt, and pepper and place around squash.
  5. Roast for 45–50 minutes until vegetables are tender.
  6. Flip squash halfway for even roasting.
  7. Serve warm with drizzled olive oil or a balsamic glaze.
