Whether you’re relying on quality canned tomatoes or have access to fresh greenhouse-grown varieties, you can still enjoy comforting, tomato-based meals during the colder months. Here are five of the best tomato recipes to warm up your kitchen this winter—with easy instructions and tips for using both canned and fresh tomatoes.

1. Creamy Tomato Soup with Basil
Nothing beats a warm bowl of tomato soup when it’s cold outside. This version is smooth, rich, and subtly sweet, with fresh basil to brighten it up.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can (400g) whole peeled tomatoes or 5 ripe fresh tomatoes, peeled and chopped
  • 1 cup vegetable or chicken stock
  • ½ cup cream
  • Salt and pepper
  • Handful of fresh basil

Method:
Sauté onion and garlic in olive oil until soft. Add tomatoes and stock, then simmer for 20 minutes. Blend until smooth, stir in cream, season to taste, and add fresh basil before serving.

2. Shakshuka (Eggs in Spicy Tomato Sauce)
This one-pan wonder is perfect for brunch or a cosy dinner. It’s hearty, spicy, and made mostly from pantry staples.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red pepper, chopped
  • 2 garlic cloves
  • 1 can (400g) chopped tomatoes or 4 large fresh tomatoes, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 eggs
  • Salt, pepper, and chopped parsley

Method:
Sauté onion, pepper, and garlic. Add tomatoes and spices, then simmer until slightly thickened. Make small wells in the sauce, crack in the eggs, and cover. Cook until the whites are just set. Garnish with parsley and serve with crusty bread.

3. Tomato and White Bean Stew
A filling, meat-free meal packed with protein and fibre—ideal for a weeknight dinner.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 garlic cloves
  • 1 can (400g) crushed tomatoes or 5 fresh tomatoes, blended
  • 1 can white beans, drained
  • 1 teaspoon thyme
  • 1 cup vegetable broth
  • Salt and pepper

Method:
Cook onion, carrot, and garlic until soft. Stir in tomatoes, beans, thyme, and broth. Simmer for 25 minutes, season well, and serve with toasted bread or over rice.

4. Baked Feta with Tomatoes
This dish is rich, creamy, and comes together in under 30 minutes. Serve it as a snack, starter, or light meal.

Ingredients:

  • 1 block feta cheese
  • 1 cup cherry tomatoes or canned whole tomatoes, drained
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • Salt and pepper
  • Bread for serving

Method:
Place the feta in a baking dish and surround with tomatoes. Drizzle with oil, season with oregano, salt, and pepper. Bake at 200°C for 20–25 minutes until golden and bubbly. Serve with warm bread.

5. Winter Tomato Pasta Sauce
This basic tomato sauce is rich, deep in flavour, and perfect for any pasta. Make a big batch and freeze portions for busy nights.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves
  • 1 can (400g) crushed tomatoes or 6 fresh tomatoes, peeled and chopped
  • 1 teaspoon sugar
  • 1 teaspoon dried basil or oregano
  • Salt and pepper

Method:
Cook onion and garlic in olive oil until soft. Add tomatoes, herbs, sugar, and seasoning. Simmer for 30 minutes until thick. Serve over pasta or use as a pizza base.
