When you’re cooking for one, it’s easy to fall into the trap of repetitive meals or pricey takeaways. But eating well on a budget doesn’t have to be complicated or bland. With just a few basic ingredients and simple techniques, you can create delicious, filling meals without overspending. These five budget-friendly recipes are perfect for solo diners—whether you’re in the mood for something meaty, comforting, or plant-based.

1. Easy Chicken & Veggie Pot Pie

This shortcut pot pie is warm, hearty, and surprisingly inexpensive. Sauté diced onion, carrot, and frozen peas in a bit of oil until softened. Add cooked shredded chicken (leftovers work great) and stir in a spoonful of flour, then slowly add a bit of chicken stock or milk to make a thick sauce. Season to taste. Pour into a small ovenproof dish and top with a ready-made puff pastry square or mashed potatoes. Bake at 200°C until golden on top.

2. One-Pan Ground Beef & Rice Skillet

Ground beef (minced meat) is one of the most versatile and affordable proteins out there. Brown 100–150g of ground beef with chopped onion and garlic, then stir in ½ cup of uncooked rice, a can of chopped tomatoes, a bit of water or broth, and your choice of spices (paprika, cumin, or mixed herbs). Simmer covered until the rice is tender, about 20–25 minutes. Add frozen peas or corn in the last few minutes if desired.

One-pan win: Fewer dishes and a complete, flavour-packed meal in one go.

3. Vegetarian Lentil & Sweet Potato Stew

Plant-based meals can be incredibly budget-friendly. In a pot, sauté onion, garlic, and chopped sweet potato in oil. Add ½ cup red lentils, 1 tsp curry powder, and enough vegetable stock to cover. Simmer until the lentils and sweet potato are soft, about 20 minutes. Adjust seasoning and enjoy as-is or serve with rice or crusty bread.

Affordable protein: Lentils are a low-cost, nutrient-dense ingredient perfect for solo cooking.

4. Creamy One-Pot Pasta with Spinach & Mushrooms

Cook your favourite pasta shape in a small saucepan. While it’s boiling, sauté mushrooms in a bit of butter or oil until browned, then add a splash of cream or milk, a pinch of garlic powder, and some grated cheese. Toss in a handful of spinach and stir until wilted. Drain the pasta, add it to the sauce, and stir to coat. Season with salt and pepper.

Cost-effective comfort: A creamy, satisfying dish that feels indulgent but uses basic ingredients.

5. Crispy Chicken & Mashed Potato Bowl

Pan-fry or oven-bake a chicken thigh or small breast seasoned with salt, pepper, and paprika. While it cooks, boil 1–2 peeled potatoes until soft, then mash with a splash of milk and a knob of butter. Serve the crispy chicken over the mash with steamed veg or a spoonful of frozen peas on the side.

Time-saver tip: Cook extra chicken and use it in a wrap or salad the next day.

Cooking for one doesn’t mean you have to settle for repetitive or boring meals. These five budget-friendly recipes prove that you can eat well, enjoy variety, and stick to your grocery budget with ease.
