From creamy soups to grilled favourites, here are five must-try recipes using sweet corn — with options for both frozen and fresh.

1. Creamy Sweet Corn Soup
This smooth, comforting soup is perfect for cooler days and can be made quickly with frozen corn or fresh kernels when in season.

Ingredients:

  • 2 cups sweet corn (fresh or frozen)
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 2 cups vegetable stock
  • 1 cup milk or cream
  • 1 tbsp butter or olive oil
  • Salt and pepper to taste
  • Optional: fresh herbs or a pinch of chilli flakes

Instructions:
Sauté chopped onion in butter until soft, then add garlic and corn. Cook for a few minutes before adding vegetable stock. Simmer for 10 minutes, then blend until smooth. Stir in milk or cream and season to taste. Serve hot with bread or a sprinkle of herbs.

2. Sweet Corn Fritters

  • 1½ cups sweet corn
  • ½ cup flour
  • 1 egg
  • ¼ cup milk
  • 2 spring onions, chopped

Instructions:

Ingredients:

  • 4 ears of fresh or thawed frozen corn on the cob
  • 2 tbsp butter (melted)
  • Salt and black pepper
  • Optional: chilli powder, lime juice, grated Parmesan, or garlic butter

Instructions:
Preheat a grill or grill pan. Brush each cob with melted butter and season with salt and pepper. Grill over medium-high heat, turning every few minutes until charred and tender (about 10–12 minutes). Finish with toppings like lime, cheese, or a pinch of spice for extra flavour.
