5 Recipes That Let Cherry Tomatoes Shine Bright

Cherry tomatoes are small, sweet, and full of flavor. Their vibrant color and natural juiciness make them perfect for dishes where they can stand out. These five recipes showcase cherry tomatoes in different ways, from fresh salads to baked dishes, allowing you to enjoy their taste in every bite. Each recipe includes full instructions so you can recreate them at home.

1. Roasted Cherry Tomato Pasta

Ingredients:

  • 400 g cherry tomatoes
  • 300 g pasta (spaghetti or penne)
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili flakes (optional)
  • Salt and black pepper to taste
  • 20 g fresh basil leaves
  • 50 g grated Parmesan cheese

Instructions:

  1. Preheat the oven to 200°C.
  2. Spread the cherry tomatoes on a baking sheet, drizzle with 2 tablespoons of olive oil, and season with salt, pepper, and chili flakes. Roast for 15–20 minutes until the skins blister.
  3. Cook the pasta according to package instructions. Drain and set aside.
  4. In a large pan, heat 1 tablespoon of olive oil over medium heat, add the minced garlic, and sauté for 1 minute.
  5. Add the roasted tomatoes to the pan and toss gently with the garlic.
  6. Mix in the cooked pasta, sprinkle with fresh basil and Parmesan, and serve immediately.

2. Cherry Tomato Caprese Salad

Ingredients:

  • 300 g cherry tomatoes, halved
  • 200 g fresh mozzarella balls
  • 20 g fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Salt and black pepper to taste

Instructions:

  1. Combine the halved cherry tomatoes and mozzarella balls in a bowl.
  2. Tear fresh basil leaves and add to the bowl.
  3. Drizzle with olive oil and balsamic glaze.
  4. Season with salt and black pepper, toss gently, and serve chilled or at room temperature.

3. Cherry Tomato Tart

Ingredients:

  • 1 sheet puff pastry (about 250 g), thawed
  • 150 g ricotta cheese
  • 300 g cherry tomatoes, halved
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions:

  1. Preheat the oven to 200°C.
  2. Roll out the puff pastry on a lightly floured surface and place it on a baking tray lined with parchment paper.
  3. Spread a thin layer of ricotta cheese over the pastry, leaving a 2 cm border around the edges.
  4. Arrange the halved cherry tomatoes on top of the ricotta. Sprinkle with thyme, salt, and pepper. Drizzle with olive oil.
  5. Bake for 20–25 minutes until the pastry is golden and crisp.
  6. Allow to cool slightly before slicing and serving.

4. Sautéed Cherry Tomato and Garlic Bruschetta

Ingredients:

  • 250 g cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 20 g fresh basil, chopped
  • 1 baguette, sliced and toasted

Instructions:

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté for 30 seconds.
  3. Add halved cherry tomatoes and cook for 5–6 minutes until softened.
  4. Season with salt, pepper, and chopped basil.
  5. Spoon the tomato mixture onto toasted baguette slices and serve warm.

5. Cherry Tomato and Quinoa Salad

Ingredients:

  • 200 g quinoa
  • 300 g cherry tomatoes, halved
  • 1 cucumber, diced
  • 50 g crumbled feta cheese
  • 20 g fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions:

  1. Cook quinoa according to package instructions, then let it cool.
  2. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, feta, and parsley.
  3. Drizzle with olive oil and lemon juice, then season with salt and black pepper.
  4. Toss gently and serve chilled or at room temperature.

Cherry tomatoes bring brightness and flavor to any dish. These five recipes—roasted pasta, Caprese salad, tart, bruschetta, and quinoa salad—allow them to shine.
