5 Sundae Sauces for Even Better Ice Cream

Ice cream is already a treat, but the right sauce can turn a scoop into something extraordinary. Whether you’re building a towering sundae or just drizzling something sweet over a bowl of vanilla, the perfect sauce adds flavour, texture, and that irresistible finishing touch. Here are five simple and delicious sundae sauces you can make at home to level up your ice cream game.

1. Classic Hot Fudge Sauce
Thick, rich, and deeply chocolatey, hot fudge is a timeless favourite.

Ingredients:

  • 120 ml heavy cream
  • 100 g dark chocolate, chopped
  • 50 g unsalted butter
  • 50 g sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. In a saucepan, combine cream, chocolate, butter, and sugar over medium heat.
  2. Stir constantly until the mixture is smooth and glossy.
  3. Remove from heat, stir in vanilla and salt.
  4. Serve warm over ice cream or store in the fridge and reheat gently.

2. Salted Caramel Sauce
Sweet, buttery, and just the right amount of salty—it’s liquid gold.

Ingredients:

  • 200 g sugar
  • 90 g unsalted butter, cubed
  • 120 ml heavy cream
  • ½ tsp sea salt

Instructions:

  1. In a heavy saucepan, heat sugar over medium heat, stirring constantly until it melts and turns amber.
  2. Carefully add the butter and whisk until melted.
  3. Slowly pour in the cream (it will bubble), whisk until smooth.
  4. Stir in the salt, let cool slightly, and drizzle over your ice cream.

3. Fresh Berry Sauce
Light and fruity, this sauce is perfect for summer and goes well with vanilla or cheesecake ice cream.

Ingredients:

  • 250 g fresh or frozen mixed berries
  • 2 tbsp sugar
  • 1 tbsp lemon juice

Instructions:

  1. In a small saucepan, combine berries, sugar, and lemon juice.
  2. Simmer over medium heat for 5–7 minutes until the berries break down.
  3. For a smooth sauce, blend and strain; for a rustic version, leave it chunky.
  4. Serve warm or chilled.

4. Peanut Butter Sauce
Creamy, nutty, and just sweet enough—this is a dream for peanut butter lovers.

Ingredients:

  • 100 g smooth peanut butter
  • 80 ml milk
  • 2 tbsp honey or maple syrup
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions:

  1. In a saucepan, combine all ingredients over low heat.
  2. Stir until smooth and pourable.
  3. If it thickens too much, add a splash more milk.
  4. Drizzle over chocolate or banana ice cream for a perfect match.

5. Espresso Chocolate Sauce
Deep chocolate with a hint of coffee—this sauce is bold and grown-up.

Ingredients:

  • 100 g dark chocolate
  • 100 ml strong brewed espresso or coffee
  • 50 g sugar
  • 1 tbsp butter

Instructions:

  1. Combine all ingredients in a small saucepan over low heat.
  2. Stir until chocolate melts and the sauce is smooth.
  3. Serve warm over ice cream—especially good on mocha or vanilla flavours.

Each of these sauces can be made in under 15 minutes and stored in the fridge for up to a week. Whether you’re craving something rich, fruity, or nutty, there’s a sauce here to make every scoop even sweeter.
