Ocean Basket’s Fish and Chips is a beloved classic that captures the essence of seaside dining with its crispy golden exterior and tender flaky fish. While a trip to the restaurant may not always be feasible, you can recreate this iconic dish in the comfort of your own kitchen. Here’s how:

Ingredients:

For the Fish:

  • 4 fillets of white fish (such as hake, cod, or haddock)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cold sparkling water or beer
  • Vegetable oil, for frying

For the Chips:

  • 4 large potatoes, peeled and cut into thick fries
  • Vegetable oil, for frying
  • Salt, to taste

For Serving:

  • Lemon wedges
  • Tartar sauce or mayonnaise

Instructions:

1. Prepare the Fish:

  • Pat the fish fillets dry with paper towels to remove excess moisture.
  • In a shallow dish, combine the flour, baking powder, salt, and pepper.
  • Gradually whisk in the cold sparkling water or beer until the batter is smooth and free of lumps.

2. Coat the Fish:

  • Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  • Dip each fish fillet into the batter, allowing any excess batter to drip off.
  • Carefully place the battered fish into the hot oil and fry until golden brown and crispy, about 5-7 minutes per side.
  • Remove the fried fish from the oil and place them on a paper towel-lined plate to drain any excess oil.

3. Prepare the Chips:

  • Rinse the cut potatoes under cold water to remove excess starch.
  • Pat the potatoes dry with paper towels.
  • In the same fryer or pot used for the fish, fry the potato fries in batches until golden and crispy, about 5-7 minutes per batch.
  • Remove the fries from the oil and place them on a paper towel-lined plate to drain.
  • Season the fries with salt while they are still hot.

4. Serve:

  • Arrange the fried fish and chips on a serving platter.
  • Serve hot with lemon wedges and tartar sauce or mayonnaise on the side for dipping.

Tips for Success:

  • Ensure the oil is hot enough before frying to achieve a crispy exterior without absorbing excess oil.
  • Do not overcrowd the fryer or pot when frying the fish or chips to maintain the temperature of the oil and prevent them from sticking together.
  • For added flavor, you can season the flour mixture with herbs or spices of your choice, such as paprika, garlic powder, or onion powder.
  • Serve the Fish and Chips immediately after frying to enjoy them at their freshest and crispiest.

With this simple recipe, you can bring the taste of Ocean Basket’s Fish and Chips to your own kitchen, allowing you to enjoy the flavors of the seaside anytime, anywhere. Whether served as a casual weeknight dinner or a special weekend treat, this homemade version is sure to satisfy your craving for classic fish and chips. So, gather your ingredients, fire up the fryer, and embark on a culinary journey to the coast from the comfort of your home. Bon appétit!
