How to Make Bulgogi at Home

Bulgogi, a popular Korean dish, consists of marinated beef that’s grilled to perfection, resulting in tender, flavorful slices that are a favorite at barbecues and family dinners. Making bulgogi at home is surprisingly simple and requires only a few key ingredients. Here’s how to prepare this delicious dish in your own kitchen.

Ingredients

For the Marinade:

  • 1 pound (450g) beef ribeye or sirloin, thinly sliced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 1 tablespoon rice wine (or mirin)
  • 4 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • 1 tablespoon gochugaru (Korean red pepper flakes, optional for heat)
  • 1/2 teaspoon black pepper
  • 2 green onions, chopped
  • 1/2 pear (Asian pear preferred), grated (for sweetness and tenderizing)

For Cooking:

  • 1 tablespoon vegetable oil (for grilling)
  • Sesame seeds (for garnish)
  • Extra green onions (for garnish)

Instructions

1. Prepare the Beef:

  • Start by slicing the beef thinly against the grain. If the meat is slightly frozen, it will be easier to cut. Aim for slices about 1/8 inch thick.

2. Make the Marinade:

  • In a large mixing bowl, combine the soy sauce, brown sugar, sesame oil, rice wine, minced garlic, grated ginger, gochugaru, black pepper, chopped green onions, and grated pear. Mix well until the sugar is dissolved.

3. Marinate the Beef:

  • Add the sliced beef to the marinade, making sure each piece is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, but for best results, marinate for 2-4 hours or overnight.

4. Cook the Bulgogi:

  • Heat a grill pan or skillet over medium-high heat and add the vegetable oil. Once hot, add the marinated beef in a single layer. Cook for about 2-3 minutes on each side, or until the beef is browned and cooked through. Avoid overcrowding the pan; cook in batches if necessary.

5. Serve:

  • Once cooked, transfer the bulgogi to a serving platter. Garnish with sesame seeds and additional chopped green onions.

Serving Suggestions

Bulgogi is traditionally served with rice and can be accompanied by various side dishes (banchan) such as kimchi, pickled vegetables, or sautéed greens. It’s also delicious when wrapped in lettuce leaves, creating a fresh and crunchy bite.

Tips for Perfect Bulgogi

  • Meat Selection: Ribeye is preferred for its marbling and tenderness, but sirloin is a great leaner option.
  • Marination Time: Longer marination not only enhances flavor but also helps to tenderize the meat.
  • Grilling Alternatives: If you don’t have a grill pan, you can use a regular skillet or an outdoor grill for that smoky flavor.
  • Vegetable Add-ins: Feel free to add sliced onions, mushrooms, or bell peppers to the pan while cooking for added flavor and nutrition.
