How to Make Pho Ga at Home

Pho Ga, the Vietnamese chicken noodle soup, is a comforting and aromatic dish that has won hearts worldwide. Making Pho Ga at home might seem daunting, but with the right ingredients and steps, you can create a bowl that rivals your favorite restaurant’s version. Here’s a simple guide to prepare Pho Ga from scratch.

Ingredients
For the broth:

  • 1 whole chicken (about 1.5–2kg)
  • 3 liters of water
  • 1 large onion (halved)
  • A 5cm piece of ginger (sliced in half lengthwise)
  • 2–3 star anise
  • 1 cinnamon stick
  • 4–5 cloves
  • 1 tablespoon coriander seeds
  • 1 tablespoon fish sauce
  • 1 tablespoon salt
  • 1 teaspoon sugar

For the soup:

  • 500g rice noodles (banh pho)
  • Fresh herbs: cilantro, Thai basil, mint, and green onions
  • Bean sprouts
  • Lime wedges
  • Fresh chili slices (optional)
  • Hoisin sauce and sriracha (for serving)

Step-by-Step Instructions

1. Prepare the Broth
Begin by charring the onion and ginger. You can do this by placing them under a broiler or directly on a gas flame until they develop a smoky, blackened exterior. Rinse off the burnt bits and set aside.

In a large pot, add the whole chicken, water, charred onion, ginger, star anise, cinnamon, cloves, and coriander seeds. Bring to a boil, then reduce to a gentle simmer. Skim off any impurities or foam that rise to the surface to ensure a clear broth. Simmer for 45–60 minutes.

Remove the chicken from the pot once fully cooked. Let it cool slightly, then shred the meat into bite-sized pieces. Reserve the bones and return them to the pot for additional flavor. Simmer the broth for another 30 minutes, then strain it through a fine mesh sieve. Season with fish sauce, salt, and sugar to taste.

2. Prepare the Noodles
While the broth is simmering, cook the rice noodles according to the package instructions. Drain and rinse under cold water to prevent sticking.

3. Assemble the Pho Ga
Divide the cooked noodles into serving bowls. Top with shredded chicken, fresh herbs, bean sprouts, and sliced green onions.

Ladle the hot broth over the noodles and toppings. Serve immediately with lime wedges, hoisin sauce, sriracha, and chili slices on the side for customization.
