1. Spinach and Feta Puff Pastry Parcels

These golden parcels are perfect as appetizers or a light lunch. Packed with nutritious spinach and tangy feta cheese, they combine classic flavours in a flaky, buttery package.

Ingredients:

  • 1 sheet of puff pastry (thawed)
  • 1 cup fresh spinach (chopped)
  • ½ cup crumbled feta cheese
  • 1 small onion (finely chopped)
  • 1 garlic clove (minced)
  • 1 egg (beaten, for egg wash)
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 200°C (400°F).
  2. Sauté onion and garlic until soft, then add spinach and cook until wilted. Let cool.
  3. Stir feta into the spinach mixture and season with salt and pepper.
  4. Cut puff pastry into squares, place a spoonful of filling in the centre of each, fold over to form parcels, and seal the edges with a fork.
  5. Brush parcels with beaten egg and bake for 15–20 minutes until golden and puffed.

2. Chicken and Mushroom Puff Pastry Pie

This hearty pie is ideal for a comforting dinner. Tender chicken, earthy mushrooms, and a creamy sauce all wrapped up in crisp puff pastry make for a crowd-pleasing main course.

Ingredients:

  • 1 sheet puff pastry (thawed)
  • 2 chicken breasts (diced)
  • 1 cup mushrooms (sliced)
  • 1 small onion (chopped)
  • 1 cup cream or cream substitute
  • 2 tablespoons olive oil
  • Salt, pepper, and thyme

Instructions:

  1. Preheat oven to 190°C (375°F).
  2. Heat oil in a pan, cook onion until translucent, add chicken and mushrooms, and cook until chicken is no longer pink.
  3. Stir in cream and thyme, simmer until sauce thickens slightly. Season well.
  4. Pour mixture into a pie dish. Cover with puff pastry, trim edges, and seal. Cut slits on top for steam.
  5. Bake for 25–30 minutes until pastry is golden.

3. Apple and Cinnamon Puff Pastry Turnovers

  2. Toss diced apples with sugar, cinnamon, and lemon juice.
  3. Cut puff pastry into squares, place apple filling in the centre, fold into triangles, and seal edges.
  4. Brush with beaten egg and bake for 15–20 minutes until golden and puffed.
