Streusel cake is a classic dessert known for its soft, moist cake base and sweet, crumbly topping. Perfect for breakfast, coffee breaks, or dessert, this cake combines rich flavor with a satisfying texture. Homemade streusel cake is simple to prepare and can be customized with fruits, nuts, or spices to suit your taste.

Ingredients

For the cake:

  • 250 g all-purpose flour
  • 200 g sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 120 ml vegetable oil or melted butter
  • 120 ml milk
  • 2 large eggs
  • 1 tsp vanilla extract

For the streusel topping:

  • 100 g all-purpose flour
  • 100 g brown sugar
  • 100 g unsalted butter, cold and cubed
  • 1 tsp ground cinnamon
  • Optional: 50 g chopped nuts or sliced almonds

Method

  1. Preheat and Prepare Pan
    Preheat the oven to 180°C. Grease a 23 cm round or square baking pan and line with parchment paper.
  2. Make the Cake Batter
    In a large bowl, whisk flour, sugar, baking powder, and salt. In a separate bowl, mix oil, milk, eggs, and vanilla. Gradually add the wet ingredients to the dry, stirring until smooth. Pour the batter into the prepared pan.
  3. Prepare the Streusel
    In a bowl, combine flour, brown sugar, and cinnamon. Add cold butter and rub it in with your fingers until the mixture forms coarse crumbs. Mix in nuts if using.
  4. Assemble and Bake
    Sprinkle the streusel evenly over the cake batter. Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean. The topping should be golden and crumbly.
  5. Cool and Serve
    Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.

Tips for Perfect Streusel Cake

  • Use cold butter in the streusel for maximum crumbly texture.
  • Do not overmix the batter to keep the cake light and fluffy.
  • Customize the cake with fruit layers such as apples, blueberries, or peaches.
  • Store in an airtight container to maintain freshness for 2–3 days.

Serving Suggestions
Serve streusel cake with coffee, tea, or a scoop of vanilla ice cream. Add a drizzle of glaze or dust with powdered sugar for extra sweetness.
