Penne pesto salad with zucchini and green peas is a fresh, vibrant dish perfect for lunch, picnics, or a light dinner. Combining al dente pasta, sweet green peas, tender zucchini, and fragrant pesto, this salad is both nutritious and satisfying. Ingredients

For the salad:

  • 300 g penne pasta
  • 1 medium zucchini, diced
  • 150 g green peas (fresh or frozen)
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 50 g grated Parmesan cheese (optional)

For the pesto:

  • 50 g fresh basil leaves
  • 30 g pine nuts or walnuts
  • 50 g grated Parmesan cheese
  • 1 clove garlic
  • 100 ml olive oil
  • Salt and pepper to taste

Method

  1. Cook the Pasta
    Boil penne pasta in salted water according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.
  2. Prepare the Vegetables
    Heat olive oil in a pan over medium heat. Sauté diced zucchini for 3–4 minutes until slightly tender. Add green peas and cook for another 2 minutes. Season with salt and pepper. Allow to cool slightly.
  3. Make the Pesto
    In a food processor, combine basil leaves, nuts, garlic, and Parmesan cheese. Blend while slowly drizzling in olive oil until smooth. Season with salt and pepper to taste.
  4. Assemble the Salad
    In a large bowl, combine the cooked penne, sautéed zucchini, and peas. Add pesto and toss until everything is evenly coated. Adjust seasoning as needed.
  5. Serve
    Sprinkle grated Parmesan over the top before serving. Serve chilled or at room temperature. Optionally, garnish with extra basil leaves or toasted nuts.
