Red Lentil Dhal Recipe

Red lentil dhal is a staple in Indian cuisine, known for its rich flavor, comforting texture, and quick preparation time. This dish is naturally high in protein, fiber, and essential nutrients, making it a perfect plant-based meal. With a blend of spices, aromatics, and red lentils, dhal can be enjoyed on its own, with rice, or alongside flatbreads.

Ingredients

  • 1 cup red lentils, rinsed and drained
  • 1 tbsp vegetable oil or ghee
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1–2 green chilies, chopped (optional)
  • 1 tsp turmeric
  • 1 tsp cumin seeds
  • 1 tsp ground coriander
  • 1/2 tsp chili powder (adjust to taste)
  • 400 ml coconut milk or water
  • 1 cup vegetable stock or water
  • Salt, to taste
  • Fresh coriander (cilantro) for garnish
  • Lemon wedges, for serving

Method

  1. Prepare the Aromatics
    Heat oil or ghee in a medium saucepan over medium heat. Add cumin seeds and allow them to sizzle for a few seconds. Add chopped onions, garlic, ginger, and green chilies. Sauté until the onions are soft and golden.
  2. Add Spices
    Stir in turmeric, ground coriander, and chili powder. Cook for 1–2 minutes until fragrant, allowing the spices to release their aroma.
  3. Cook the Lentils
    Add the red lentils to the pan and stir to coat them with the spice mixture. Pour in coconut milk and vegetable stock or water. Bring to a boil, then reduce heat to a simmer. Cook for 15–20 minutes, stirring occasionally, until the lentils are soft and the mixture has thickened.
  4. Season and Garnish
    Add salt to taste. Garnish with fresh coriander and serve with lemon wedges. Dhal pairs beautifully with steamed rice, naan, or roti.

Tips for Perfect Red Lentil Dhal

  • Rinse lentils thoroughly to remove excess starch and prevent them from becoming too mushy.
  • Adjust the consistency by adding more water or stock if you prefer a soupier dhal.
  • For extra flavor, temper additional spices in hot oil (mustard seeds, curry leaves) and pour over the cooked dhal before serving.
  • Red lentils cook faster than other lentils, making this a quick and convenient meal.

  • Creamy Coconut Dhal: Use full-fat coconut milk for a richer, creamier texture.
  • Tomato Dhal: Add chopped tomatoes during cooking for a tangy, slightly sweet flavor.
