Carrot cake is a classic dessert that balances sweetness, spice, and texture, making it a favorite for birthdays, holidays, or any special occasion. A layered carrot cake elevates this treat by combining moist, flavorful cake layers with rich cream cheese frosting. The natural sweetness of carrots, combined with warming spices and optional add-ins like nuts or pineapple, creates a dessert that is both indulgent and wholesome. This article provides a detailed recipe for a layered carrot cake that is easy to follow and yields impressive results.

Ingredients

For the cake:

  • 250 g all-purpose flour
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • 200 g brown sugar
  • 120 ml vegetable oil
  • 3 large eggs
  • 200 g grated carrots
  • 50 g crushed pineapple, drained (optional)
  • 50 g chopped walnuts or pecans (optional)
  • 1 tsp vanilla extract

For the cream cheese frosting:

  • 225 g cream cheese, softened
  • 100 g unsalted butter, softened
  • 200 g icing sugar, sifted
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 180°C. Grease and line two 20 cm round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.
  3. In a large bowl, beat together brown sugar, oil, and eggs until smooth and well combined. Stir in vanilla extract.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing to keep the cake tender.
  5. Fold in grated carrots, crushed pineapple, and chopped nuts if using.
  6. Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.
  7. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Allow cakes to cool in pans for 10 minutes before transferring to a wire rack to cool completely.

For the frosting:

  1. In a medium bowl, beat cream cheese and butter together until smooth and creamy.
  2. Gradually add icing sugar and beat until well combined. Stir in vanilla extract.
  3. Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of frosting over the top.
  4. Place the second cake layer on top and frost the top and sides evenly. Optionally, garnish with chopped nuts or grated carrot for decoration.

Tips for the Perfect Layered Carrot Cake

  • Grate the carrots finely to ensure even moisture throughout the cake.
  • Allow the cakes to cool completely before frosting to prevent the frosting from melting.
  • For extra flavor, lightly toast the nuts before adding them to the batter.
  • Refrigerate the cake for 30 minutes after frosting to help it set, making slicing easier.
