Spinach and Ricotta Lasagne Recipe: A Healthy Twist on a Classic

Lasagne is a comforting, family-friendly dish known for its layers of pasta, cheese, and sauce. This spinach and ricotta lasagne offers a lighter, vegetable-packed alternative while maintaining all the rich flavours of a traditional lasagne. Combining tender spinach, creamy ricotta, and a simple tomato sauce creates a meal that is both nutritious and indulgent. This article provides a detailed recipe for making a delicious spinach and ricotta lasagne at home, along with tips for perfect layering, seasoning, and serving.

Ingredients

For the tomato sauce:

  • 500 g canned chopped tomatoes
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • Salt and black pepper to taste

For the spinach and ricotta filling:

  • 400 g fresh spinach, washed and chopped
  • 250 g ricotta cheese
  • 50 g grated Parmesan cheese
  • 1 egg
  • Salt and black pepper to taste
  • Pinch of nutmeg (optional)

For assembly:

  • 9–12 lasagne sheets (fresh or pre-cooked)
  • 150 g grated mozzarella cheese
  • Extra Parmesan for topping

Instructions

  1. Preheat the oven to 180°C.
  2. Prepare the tomato sauce by heating olive oil in a pan over medium heat. Sauté onion and garlic until soft and fragrant. Add chopped tomatoes, oregano, basil, salt, and pepper. Simmer for 15–20 minutes until slightly thickened.
  3. Prepare the spinach filling by blanching chopped spinach in boiling water for 2–3 minutes, then draining and squeezing out excess water. Mix spinach with ricotta, grated Parmesan, egg, salt, pepper, and nutmeg if using.
  4. Assemble the lasagne in a greased baking dish. Start with a thin layer of tomato sauce, followed by a layer of lasagne sheets. Spread half of the spinach and ricotta mixture over the sheets, then cover with another layer of sauce. Repeat layers, finishing with pasta sheets and remaining sauce. Sprinkle grated mozzarella and extra Parmesan on top.
  5. Cover with foil and bake for 25 minutes. Remove the foil and bake for another 10–15 minutes until the top is golden and bubbling. Let the lasagne rest for 10 minutes before slicing and serving.

Tips for the Perfect Spinach and Ricotta Lasagne

  • Ensure the spinach is well-drained to avoid a watery lasagne.
  • Use fresh lasagne sheets for a softer texture, or pre-cook dry sheets according to package instructions.
  • Add a layer of béchamel sauce for an extra creamy texture if desired.
  • Season each layer as you assemble to enhance overall flavour.
  • Allow the lasagne to rest after baking; this helps the layers set and makes cutting easier.
