Instructions

Preheat the oven to 200°C.

Coat the sweet potato with olive oil, paprika and cumin.

Roast for 30 minutes.

Divide the brown rice between serving bowls.

Top with roasted sweet potato, black beans, sweetcorn, avocado and tomatoes.

Finish with lime juice and fresh coriander.

Serve immediately.

5. Pear and Berry Whole Wheat Muffins

  • 250 g whole wheat flour
  • 10 g baking powder
