  • 30 g pumpkin seeds
  • Salt and black pepper to taste

For the Dressing

  • 30 ml olive oil
  • 15 ml lemon juice
  • 5 ml Dijon mustard
  • 10 ml honey

Instructions

Preheat the oven to 200°C.

Toss the butternut and onion with olive oil, smoked paprika, thyme, salt and black pepper.

Roast for 30 to 35 minutes until tender.
