If you’re a fan of the refreshing flavor combination of mint and chocolate, then a homemade Mint Chocolate Chip Cake is the perfect dessert for you. This delightful cake features layers of moist chocolate cake infused with a hint of mint, paired with a creamy and refreshing mint chocolate chip frosting. Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 and 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons peppermint extract
  • 1 cup boiling water

For the Mint Chocolate Chip Frosting:

  • 1 and 1/2 cups unsalted butter, softened
  • 4 and 1/2 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon peppermint extract
  • Green gel food coloring (optional)
  • 1 cup mini chocolate chips

For Garnish:

  • Additional mini chocolate chips
  • Fresh mint leaves

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans or line them with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and peppermint extract to the dry ingredients. Mix on medium speed until well combined. Reduce the speed and carefully add the boiling water, mixing until the batter is smooth. The batter will be thin, but that’s okay.
  4. Divide the batter equally between the prepared cake pans.
  5. Bake in the preheated oven for approximately 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. The cakes should be springy to the touch.
  6. Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then transfer them to a wire rack to cool completely.
  7. While the cakes are cooling, prepare the mint chocolate chip frosting. In a large mixing bowl, beat the softened butter until creamy and smooth.
  8. Gradually add the powdered sugar, milk, and peppermint extract to the butter. Beat on low speed until the ingredients are combined, then increase the speed to medium-high and continue to beat until the frosting is light and fluffy.
  9. If desired, add a few drops of green gel food coloring to the frosting and mix until the desired shade of green is achieved.
  10. Stir in the mini chocolate chips, reserving a handful for garnish.
  11. Once the cakes have completely cooled, it’s time to assemble the Mint Chocolate Chip Cake. Place one cake layer on a serving plate and spread a generous amount of mint chocolate chip frosting on top.
  12. Repeat this process with the remaining cake layers, stacking them on top of each other and covering the entire cake with the frosting.
  13. Use a spatula to smooth the frosting on the top and sides of the cake, creating a beautifully decorated finish.
  14. Sprinkle additional mini chocolate chips on top of the cake and garnish with fresh mint leaves for an extra touch of elegance.
